{"id":3480,"date":"2017-01-24T10:29:21","date_gmt":"2017-01-24T17:29:21","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=3480"},"modified":"2022-03-18T11:55:31","modified_gmt":"2022-03-18T17:55:31","slug":"zucchini-salad","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/zucchini-salad.html","title":{"rendered":"Isabel&#8217;s Zucchini Salad"},"content":{"rendered":"<p><em>Another use for the abundance\u00a0of zucchini each summer.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2 lbs zucchini, small, sliced thin<\/li>\n<li>1\/4 c vinegar<\/li>\n<li>1\/2 c oil<\/li>\n<li>1 tsp salt<\/li>\n<li>2 tsp sugar<\/li>\n<li>3 Tab green peppers chopped<\/li>\n<li>3 Tab sweet pickle relish<\/li>\n<li>4 Tab green onion minced<\/li>\n<li>2 Tab parsley, chopped<\/li>\n<li>2 Tab pimento<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Drop zucchini in boiling salted water.<\/li>\n<li>Cook 2 minutes.<\/li>\n<li>Drain.<\/li>\n<li>Combine rest of ingredients in a jar.<\/li>\n<li>Shake until well blended.<\/li>\n<li>Pour over zucchini.<\/li>\n<li>Refrigerate, covered, at least 2 hours.<\/li>\n<li>Stir gently once or twice.<\/li>\n<\/ol>\n<p><strong>Serves: \u00a0<\/strong>6 &#8211; 8<\/p>\n<p><strong>Source: \u00a0<\/strong>\u00a0Isabel Prucha<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Another use for the abundance\u00a0of zucchini each summer.
