{"id":3490,"date":"2017-01-24T10:25:11","date_gmt":"2017-01-24T17:25:11","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=3490"},"modified":"2017-01-24T10:25:11","modified_gmt":"2017-01-24T17:25:11","slug":"refrigerator-sweet-muffins","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/refrigerator-sweet-muffins.html","title":{"rendered":"Refrigerator Sweet Muffins"},"content":{"rendered":"<p><em>When you have overnight company &#8211; breakfast can be a challenge. \u00a0This dough can be made ahead and will keep for up to 5 days. \u00a0Fresh hot muffins for the win!<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>4 1\/2 c flour, firmly packed<\/li>\n<li>1\/2 c brown sugar<\/li>\n<li>1\/2 c white sugar<\/li>\n<li>4 tsp baking powder<\/li>\n<li>1 tsp baking soda<\/li>\n<li>1 tsp salt<\/li>\n<li>2 c buttermilk (or 2 Tab vinegar or lemon juice and enough milk to make 2 cups.)<\/li>\n<li>3\/4 c oil<\/li>\n<li>1 1\/2 tsp vanilla<\/li>\n<li>3 eggs<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Combine flour, brown and white sugar, baking powder, soda and salt.<\/li>\n<li>Blend well.<\/li>\n<li>In a small bowl combine buttermilk, oil, vanilla and eggs.<\/li>\n<li>Mix well.<\/li>\n<li>Add liquid ingredients to dry, stirring just until dry ingredients are moistened.<\/li>\n<li>Cover tightly,<\/li>\n<li>Refrigerate up to 5 days.<\/li>\n<\/ol>\n<p>To bake:<\/p>\n<ol>\n<li>Heat oven to 375\u00b0.<\/li>\n<li>Choose one of the flavor variations.&#8217; Grease bottoms only of\u00a06\u00a0muffin\u00a0cups, or line with paper cups.<\/li>\n<li>In a small bowl place 1 1\/3 c batter.<\/li>\n<li>Fold in flavor ingredients.<\/li>\n<li>Fill cups 2\/3 full.<\/li>\n<li>Bake 20-25 minutes or until a toothpick inserted comes out clean.<\/li>\n<\/ol>\n<p>Flavor Ingredients:<\/p>\n<ul>\n<li>Raisin spice: 1\/3 c raisins, 1\/2 tsp cinnamon, \u00a01\/4 tsp nutmeg, 1\/4 tsp allspice, 1\/4 tsp cloves<\/li>\n<li>Maple walnut: 1\/3 c chopped walnuts, 1\/2 tsp maple extract.<\/li>\n<li>Chocolate chip: \u00a01\/3 c miniature chocolate chips<\/li>\n<li>Mixed fruit: 1\/3 c chopped dried fruit<\/li>\n<li>Banana nut: \u00a01\/2 c chopped banana, 1\/4 c chopped nuts<\/li>\n<li>Apple: \u00a01\/3 c peeled and chopped apple, 1\/2 tsp cinnamon<\/li>\n<li>Blueberry: \u00a0Combine 1\/4 &#8211; 1\/2 c blueberries with 1 Tab sugar, fold into batter<\/li>\n<li>Cinnamon topped: \u00a0After baking, dip top of muffin in melted butter then a mixture of 2 Tab sugar, 1\/4 tsp cinnamon, 1\/4 tsp nutmeg<\/li>\n<\/ul>\n<p><strong>Serves:<\/strong> \u00a0Recipe makes 24 muffins<\/p>\n<p><strong>Source: \u00a0<\/strong> Mystery to me!<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>When you have overnight company &#8211; breakfast can be a challenge. \u00a0This dough can be made ahead and will keep for up to 5 days. \u00a0Fresh hot muffins for the win!
