{"id":3785,"date":"2017-05-24T11:31:01","date_gmt":"2017-05-24T17:31:01","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=3785"},"modified":"2017-07-07T20:32:23","modified_gmt":"2017-07-08T02:32:23","slug":"anns-hot-corn-dip","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/anns-hot-corn-dip.html","title":{"rendered":"Ann&#8217;s Hot Corn Dip"},"content":{"rendered":"<div class=\"panel\">\n<div id=\"recipe-ingredients-5922244051d48\" class=\"panel-collapse collapse in\">\n<div class=\"panel-body\">\n<p><em>Pretty yummy! \u00a0Cheese, sour cream, corn and all the other good stuff &#8211; not to be laughed at.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul class=\"list-ingredients\">\n<li>5 ears corn ( or 3 1\/2 cups canned or frozen corn)<\/li>\n<li>1\/2 red onion, diced<\/li>\n<li>2 cloves garlic, minced<\/li>\n<li>1 red bell pepper, Seeded And Diced<\/li>\n<li>1 green bell pepper, seeded and diced<\/li>\n<li>1 T fresh jalapeno, seeded and diced fine<\/li>\n<li>2 Tab butter<\/li>\n<li>8 ounces cream cheese, softened (not whipped\/soft cream cheese)<\/li>\n<li>1\/2 c mayonnaise &#8211; not Marcel Whip<\/li>\n<li>1\/2 c sour cream<\/li>\n<li>4 c (1 pound) Monterey Jack cheese, grated<\/li>\n<li>2 \u00a0green onions, sliced<\/li>\n<li>chili owder, for sprinkling<\/li>\n<li>1 can (4 Ounces) diced green chilies<\/li>\n<\/ul>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"panel\">\n<div id=\"recipe-instructions-heading-5922244051d48\" class=\"panel-heading\">\n<h4 class=\"panel-title\"><strong>Directions:<\/strong><\/h4>\n<\/div>\n<div id=\"recipe-instructions-5922244051d48\" class=\"panel-collapse collapse in\">\n<ol>\n<li class=\"panel-body\">Preheat the oven to 350\u00b0.<\/li>\n<li class=\"panel-body\">Brush the corn cobs with vegetable oil, sprinkle with a little salt, and place on a grill pan for about 10 minutes, turning constantly.<\/li>\n<li class=\"panel-body\">Remove it from the heat to cool. Cut the kernels off the cobs once they&#8217;re cool enough to handle. (Or saute the canned\/frozen corn in a large frying pan until well browned.<\/li>\n<li class=\"panel-body\">Set aside<\/li>\n<li class=\"panel-body\">In a large skillet over medium heat, melt the butter and add the onion, garlic, bell peppers, and jalapeno.<\/li>\n<li class=\"panel-body\">Stir and cook for 5 minutes, until the veggies are soft and golden.<\/li>\n<li class=\"panel-body\">Remove the skillet from the heat to let the veggies cool slightly.<\/li>\n<li class=\"panel-body\">In a mixer, combine the cream cheese, mayo, sour cream, and 2\/3 of the Monterey Jack.<\/li>\n<li class=\"panel-body\">Mix with the paddle attachment on low until combined.<\/li>\n<li class=\"panel-body\">Add the green onions, the veggie mixture, the corn, and the green chilies.<\/li>\n<li class=\"panel-body\">Mix on low until just combined.<\/li>\n<li class=\"panel-body\">Spread the mixture in a shallow baking dish and sprinkle with the rest of the Monterey Jack.<\/li>\n<li class=\"panel-body\">Bake for 20 to 22 minutes, until bubbly and golden.<\/li>\n<li class=\"panel-body\">Remove from the oven and serve warm with tortilla chips!<\/li>\n<\/ol>\n<p><strong>Serves:<\/strong> \u00a06 cups<\/p>\n<p><strong>Source:<\/strong> \u00a0Ann Crane<\/p>\n<\/div>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>Pretty yummy! \u00a0Cheese, sour cream, corn and all the other good stuff &#8211; not to be laughed at.
