{"id":4372,"date":"2018-12-18T14:02:49","date_gmt":"2018-12-18T21:02:49","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=4372"},"modified":"2018-12-18T14:02:49","modified_gmt":"2018-12-18T21:02:49","slug":"chocolate-mousse-amaretto","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/chocolate-mousse-amaretto.html","title":{"rendered":"Chocolate Mousse Amaretto"},"content":{"rendered":"<p><em>Chocolate Mousse is one of those classic desserts that no one makes any more &#8220;because it is so complicated&#8221;.\u00a0 Not really true, and you can make it the day before.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>6 squares semisweet chocolate squares<\/li>\n<li>4 each eggs, separated<\/li>\n<li>3 Tab amaretto<\/li>\n<li>3 Tab sugar<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>In medium bowl, melt chocolate in the microwave &#8211; 30 seconds, stir, 30 seconds<\/li>\n<li>Cool to lukewarm.<\/li>\n<li>Beat in egg yolks, one at a time.<\/li>\n<li>Stir in Amaretto.<\/li>\n<li>Beat egg whites until foamy<\/li>\n<li>Gradually beat in sugar until whites form stiff peaks.<\/li>\n<li>Stir 1\/3 of meringue whites into chocolate.<\/li>\n<li>Gently fold chocolate mixture into remaining meringue until no streaks remain.<\/li>\n<li>Spoon into serving cups.<\/li>\n<li>Chill at least 1 hour before serving.<\/li>\n<\/ol>\n<p><strong>Serves:\u00a0\u00a0<\/strong>4<\/p>\n<p><strong>Source:\u00a0\u00a0<\/strong>Epicurious<\/p>\n<p><em> If time allows, here is a fancier version of chocolate mousse.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1-1\/2 pounds semisweet chocolate chips<\/li>\n<li>1\/2 c brewed espresso<\/li>\n<li>1\/2 c Amaretto<\/li>\n<li>4 egg yolks<\/li>\n<li>1 c heavy cream, chilled<\/li>\n<li>1\/4 c sugar<\/li>\n<li>9 egg whites, at room temperature<\/li>\n<li>Pinch salt<\/li>\n<li>1 c lightly toasted almonds (optional &#8211; not traditional)<\/li>\n<li>1 c creme fraiche for garnish<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Melt the chocolate chips in a heavy medium-size saucepan over very low heat, stirring constantly.<\/li>\n<li>Add the espresso, then the Amaretto.<\/li>\n<li>Let cool to room temperature.<\/li>\n<li>Add the egg yolks, one at a time, beating well after each addition.<\/li>\n<li>Whip the cream until thickened.<\/li>\n<li>Gradually beat in the sugar and continue beating until stiff.<\/li>\n<li>Beat the egg whites with the salt in another bowl until stiff.<\/li>\n<li>Gently fold the egg whites into the cream.<\/li>\n<li>Stir about a third of the cream mixture thoroughly into the chocolate mixture.<\/li>\n<li>Scrape the remaining cream mixture over the chocolate and fold together gently.<\/li>\n<li>Fold in the almonds.<\/li>\n<li>Pour into individual servings cups, sherbet cups or wine glasses.<\/li>\n<li>Refrigerate for two hours.<\/li>\n<li>To serve, pipe or spoon the creme fraiche over each mousse.<\/li>\n<\/ol>\n<p><strong>Serves:\u00a0<\/strong>\u00a0 8<\/p>\n<p><strong>Source:\u00a0\u00a0<\/strong>The Times-Picayune,Updated\u00a0Mar 24, 2015;\u00a0Posted\u00a0Mar 20, 2015, By\u00a0Marcelle Bienvenu, NOLA.com<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Chocolate Mousse is one of those classic desserts that no one makes any more &#8220;because it is so complicated&#8221;.\u00a0 Not really true, and you can make it the day before.
