{"id":4429,"date":"2017-08-22T11:28:09","date_gmt":"2017-08-22T17:28:09","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=4429"},"modified":"2017-08-22T11:39:49","modified_gmt":"2017-08-22T17:39:49","slug":"chuck-wagon-stew","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/chuck-wagon-stew.html","title":{"rendered":"Chuck Wagon Stew"},"content":{"rendered":"<p><em>You have to love the quick (except for cooking time!) \u00a0prep for succulent, delicious, and exceptionally easy pork for enchiladas, tamales, or burritos or even to eat all by itself! \u00a0It gets even better after a day or two.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>3 Tab oil<\/li>\n<li>8#\u00a0boneless pork loin roast<\/li>\n<li>1 Trader Joe&#8217;s spice salsa<\/li>\n<li>1 Trader Joe&#8217;s mild salsa<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Heat oil in large frying pan or Dutch oven over medium-high heat.<\/li>\n<li>Brown pork loin in hot oil, 2 to 3 minutes per side.<\/li>\n<li>Transfer roast to \u00a0a slow cooker.<\/li>\n<li>Pour \u00a0salsa over the pork.<\/li>\n<li>Cook on Low for 5 hours.<\/li>\n<li>Shred the pork into strands with two forks; stir with the sauce so the texture is somewhat even.<\/li>\n<li>Continue cooking on Low for 1 to 3 hours more.<\/li>\n<li>Serve with tortillas, cheese, onions, sour cream, cilantro, salsa, etc.<\/li>\n<\/ol>\n<p><strong>Serves: \u00a0<\/strong>40 or so<\/p>\n<p><strong>Source: <\/strong>Cathy Painter\/Allison Cozza<\/p>\n","protected":false},"excerpt":{"rendered":"<p>You have to love the quick (except for cooking time!) \u00a0prep for succulent, delicious, and exceptionally easy pork for enchiladas, tamales, or burritos or even to eat all by itself! \u00a0It gets even better after a day or two.
