This sunny yellow side dish is the traditional accompaniment to\u00a0nayama choma (roasted meat).\u00a0\u00a0<\/em><\/p>\n<p><strong>Ingredients:\u00a0<\/strong><\/p>\n<ul>\n<li>4 c water or stock<\/li>\n<li>2 1\/2 c long grained or Basmati rice<\/li>\n<li>1 tsp turmeric<\/li>\n<li>1 cinnamon stick<\/li>\n<li>1\/2 tsp ground cinnamon<\/li>\n<li>1 or 2 Tab brown sugar<\/li>\n<li>Salt and pepper &#8211; to taste<\/li>\n<li>1\/2 c raisins<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Add the water or stock to a large saucepan and bring to a boil over medium heat.<\/li>\n<li>Add the remaining ingredients and return to a boil.<\/li>\n<li>Reduce heat to low, cover tightly and simmer for 15 minutes.<\/li>\n<li>Remove from heat and set aside, covered, for another 5 to\u00a010 minutes.<\/li>\n<li>Discard cinnamon stick, fluff with a fork and serve hot.<\/li>\n<\/ol>\n<p><b>Variations:<\/b><\/p>\n<p>You can use instant rice also.\u00a0 Boil all the ingredients except the rice for 5 minutes, then add the rice (using the ratio of water to rice recommended) and cook according to the directions on the box.<br \/>\nGolden raisins (sultanas) work very well with this dish.<br \/>\nStir 1 or 2 tablespoons of butter into the cooked rice at the end.<\/p>\n<p><strong>Serves: <\/strong>4 &#8211; 6<\/p>\n<p><strong>Source:\u00a0\u00a0<\/strong>geniuskitchen.com<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Rice is one of those alternate starches that accommodates\u00a0many variations.\u00a0 \u00a0This is easy and not &#8220;too different&#8221; to appeal to kid.\u00a0 Geelrys\u00a0is one of many South African dishes with roots in the Dutch East Indies.
