Place wrapped loaves in resealable freezer plastic bags and freeze up to 3 months.\u00a0 If you don\u2019t have mini loaf pans, look for disposable foil mini loaf pans at the grocery store or craft stores. They\u2019re also handy for giving loaves as a gift, wrapped in plastic wrap and ribbon.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>4 c flour<\/li>\n<li>2 tsp baking soda<\/li>\n<li>1 tsp salt<\/li>\n<li>1 tsp ground cinnamon<\/li>\n<li>1\/2 tsp ground nutmeg<\/li>\n<li>2 c brown sugar<\/li>\n<li>3\/4 c butter, softened<\/li>\n<li>4 eggs<\/li>\n<li>1\/2 c water<\/li>\n<li>1 can (15 oz) pumpkin (not pumpkin pie mix)<\/li>\n<li>1 c miniature semisweet chocolate chips<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Heat oven to 350\u00b0.<\/li>\n<li>Grease bottom only of two 8&#215;4-inch loaf pans with shortening and lightly flour (or spray bottoms of pans with cooking spray; do not flour).<\/li>\n<li>In medium bowl, stir flour, baking soda, salt, cinnamon and nutmeg until mixed; set aside.<\/li>\n<li>In large bowl, beat 2 cups sugar and the butter with electric mixer on medium speed 1 to 2 minutes or until creamy.<\/li>\n<li>Add eggs, one at a time, beating well after each addition.<\/li>\n<li>Beat in water and pumpkin on low speed.<\/li>\n<li>Add flour mixture; beat on low speed about 1 minute or until moistened.<\/li>\n<li>Stir in the chocolate chips.<\/li>\n<li>Spread evenly in pans.<\/li>\n<li>Bake 1 hour 5 minutes to 1 hour 15 minutes or until toothpick inserted in center comes out clean.<\/li>\n<li>Cool in pans 10 minutes.<\/li>\n<li>Remove from pans to cooling rack.<\/li>\n<li>Cool completely, about 1 1\/2 hours.<\/li>\n<li>Wrap loaves tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.<\/li>\n<li>To serve, cut each loaf into 6 to 8 slices.<\/li>\n<\/ol>\n<p>Make pumpkin nut bread by substituting chopped walnuts or pecans for the chocolate chips.<\/p>\n<p><strong>Serves:\u00a0\u00a0<\/strong>Makes 2 loaves<\/p>\n<p><strong>Source:<\/strong>\u00a0 Betty Crocker<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>These loaves freeze beautifully.
