If you have not seen it, I highly recommend watching it! I promise Ratatouille will make you fall in love with joy of cooking!<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1-2 c tomato sauce (good quality tomato basil sauce)<\/li>\n<li>2 garlic (cloves, minced)<\/li>\n<li>3-4 thyme (sprigs)<\/li>\n<li>2 Tab olive oil<\/li>\n<li>1\/2 tsp chili flakes<\/li>\n<li>1 egg plant Or Brinjal (thin eggplant, thin sliced)<\/li>\n<li>1 yellow squash (thin sliced)<\/li>\n<li>1 zucchini (thin sliced)<\/li>\n<li>1 red bell pepper (thin sliced)<\/li>\n<li>2-3 potatoes (medium size, thin sliced)<\/li>\n<li>salt and black pepper<\/li>\n<li>oil spray<\/li>\n<li>b\u00e9chamel sauce<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Preheat oven at 375 \u00b0.<\/li>\n<li>Bring 2 cups of water to rolling boil.<\/li>\n<li>Season with salt.<\/li>\n<li>Drop slice red potatoes in water and boil for 3-4minutes or until par cooked.<\/li>\n<li>Drain on a paper towel and set aside.<\/li>\n<li>While potatoes cook and cool down, slice rest of veggies &#8211; squash, bell pepper and eggplant.<\/li>\n<li>Spray baking dish with cooking spray.<\/li>\n<li>Spread layer of tomato sauce, minced garlic, thyme, red chili flakes, salt and olive oil.<\/li>\n<li>Mix well while still leaving well spread.<\/li>\n<li>Drizzle b\u00e9chamel sauce on the top, swirl into the tomato sauce.<\/li>\n<li>Layer sliced veggies on top. Make a spiral stack of vegetable slices for presentation just like in the movie Ratatouille.<\/li>\n<li>Drizzle with olive oil.<\/li>\n<li>Sprinkle salt, thyme,and black pepper on top.<\/li>\n<li>Cover with parchment paper.<\/li>\n<li>Bake for 55-60 minutes or until all veggies are tender. You will see tomato sauce bubbling on the sides.<\/li>\n<li>Let it cool for 5 minutes.<\/li>\n<li>Serve with side of crusty bread to scoop the sauce. Enjoy!<\/li>\n<\/ol>\n<p style=\"text-align: center;\"><strong>B\u00e9chamel Sauce<\/strong><\/p>\n<p style=\"text-align: left;\"><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1\u00a0Tab\u00a0unsalted butter<\/li>\n<li>1\u00a0Tab\u00a0Flour<\/li>\n<li>1 c milk (2% or whole milk)<\/li>\n<li>1\/8 tsp nutmeg<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Microwave 1 cup of milk in microwave safe container.<\/li>\n<li>Set aside<\/li>\n<li>Heat 1\u00a0Tab butter in sauce pan.<\/li>\n<li>Add 1\u00a0Tab flour and cook until raw flavor of flour goes away. 1-2 minutes. Don&#8217;t let flour turn brown.<\/li>\n<li>Add warm milk 1\/4 cup at time and stir well to avoid lumps.<\/li>\n<li>Add all of milk and continue coking until sauce thickens and coat back of a spoon.<\/li>\n<li>Season with salt, nutmeg, and black pepper.<\/li>\n<li>Set aside.<\/li>\n<\/ol>\n<p><strong>Serves:<\/strong> 6<\/p>\n<p><strong>Source:\u00a0\u00a0<\/strong>Chef de Home<\/p>\n","protected":false},"excerpt":{"rendered":"<p>If you to loved the movie Ratatouille, you will love making this casserole at home!
