anything goes.\u00a0 Most chutney recipes can be altered to suit the occasion (like most salsas).\u00a0 And it is not just for lamb &#8212; goes with chicken, fish, and pork too.<\/em><\/p>\n<h3 style=\"text-align: left;\">Ingredients<\/h3>\n<ul>\n<li style=\"text-align: left;\">1 c chopped yellow onion<\/li>\n<li style=\"text-align: left;\">2\u00a0Tab minced or grated fresh ginger (or powdered is ok)<\/li>\n<li style=\"text-align: left;\">1 c freshly squeezed orange juice (4 oranges)<\/li>\n<li style=\"text-align: left;\">\u00be c apple cider vinegar\u00a0 (we use only \u00bc c to make more of an apple compote.)<\/li>\n<li style=\"text-align: left;\">1 c light brown sugar, lightly packed<\/li>\n<li style=\"text-align: left;\">1 tsp whole mustard seeds<\/li>\n<li style=\"text-align: left;\">\u00bc tsp crushed red pepper flakes<\/li>\n<li style=\"text-align: left;\">1\u00bd teaspoons kosher salt<br \/>\n&#8212;&#8212;&#8211;<\/li>\n<li style=\"text-align: left;\">6 Granny Smith apples, peeled, cored, and \u00bd-inch-diced (equals about 9 cups)<\/li>\n<li style=\"text-align: left;\">\u00be c raisins<\/li>\n<li>\u00be c dried apricots, diced<\/li>\n<\/ul>\n<h3>Directions<\/h3>\n<ol>\n<li style=\"text-align: left;\">Combine the onion, ginger, orange juice, vinegar, brown sugar, mustard seeds, red pepper flakes, and salt in a medium-size saucepan.<\/li>\n<li style=\"text-align: left;\">Add the apples, adding them as you chop to keep them from turning brown.<\/li>\n<li style=\"text-align: left;\">Bring to a boil over medium-high heat, stirring occasionally.<\/li>\n<li style=\"text-align: left;\">Reduce the heat and simmer for 50 minutes to 1 hour, stirring occasionally, until most of the liquid has evaporated.<\/li>\n<li style=\"text-align: left;\">Stir in the raisins, apricots.<\/li>\n<li style=\"text-align: left;\">Serve warm, at room temperature, or cold.<\/li>\n<\/ol>\n<p><strong>Serves:\u00a0\u00a0<\/strong>Makes\u00a05 cups<\/p>\n<p><strong>Source:\u00a0\u00a0<\/strong>Make It Ahead, Ina Garten<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Chutney is on of those additions to a meal that can be whatever you want it to be.\u00a0 Light and fruity, spicy, hot, cold, sweet, tart &#8211;
