{"id":5070,"date":"2018-01-11T09:17:15","date_gmt":"2018-01-11T16:17:15","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=5070"},"modified":"2018-01-11T09:17:15","modified_gmt":"2018-01-11T16:17:15","slug":"cheesy-peas","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/cheesy-peas.html","title":{"rendered":"Cheesy Peas"},"content":{"rendered":"<p><em>What a great variation on peas.\u00a0 So easy!\u00a0 We used English peas because they were in season but frozen works just fine &#8211; go for the baby peas.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>4 big handfuls of fresh or frozen peas\u00a0 (How big is your hand?!)<\/li>\n<li>olive oil<\/li>\n<li>1 small handful of Parmesan cheese ,<\/li>\n<li>freshly grated<\/li>\n<li>1 lemon<\/li>\n<li>ground white pepper<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Boil the peas until perfect, then remove from the heat and drain in<br \/>\na colander,<span style=\"text-decoration: underline;\"> saving a small cup of the cooking water.<\/span><\/li>\n<li>Put the peas back in the pan with some of the reserved water.<\/li>\n<li>Add a splash of olive oil.<\/li>\n<li>Stir around.<\/li>\n<li>Then sprinkle in the Parmesan cheese.<\/li>\n<li>Stir again until every single pea is lightly coated in the sweet, delicately melted cheese. You may need to add a bit more water to loosen the peas \u2013 you want them to be oozy (almost like a risotto consistency).<\/li>\n<li>A small squeeze of lemon juice always lifts the peas and cuts through the cheese.<\/li>\n<li>A sprinkle of white pepper is nice too.<\/li>\n<\/ol>\n<p>&#8220;This dish is best made quickly at the very last minute as, like a risotto, the moment those peas begin to cool down, things start getting a little claggy and rubbery and you definitely don\u2019t want that.&#8221;<\/p>\n<p><strong>Serves:\u00a0<\/strong>4<\/p>\n<p><strong>Source:\u00a0\u00a0<\/strong>Cook with Jamie, Jamie Oliver<\/p>\n","protected":false},"excerpt":{"rendered":"<p>What a great variation on peas.\u00a0 So easy!\u00a0 We used English peas because they were in season but frozen works just fine &#8211; go for the baby peas.
