{"id":5083,"date":"2018-01-08T12:00:59","date_gmt":"2018-01-08T19:00:59","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=5083"},"modified":"2018-01-08T12:04:13","modified_gmt":"2018-01-08T19:04:13","slug":"chocolate-ganache","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/chocolate-ganache.html","title":{"rendered":"Chocolate Ganache"},"content":{"rendered":"<p><em>Chocolate Ganache\u00a0 one of those recipes that, once you have done it, you will want to use it on everything &#8211; cakes, ice cream, cookies, as a filling, topping, everything.<\/em><\/p>\n<p><strong> Ingredients:<\/strong><\/p>\n<ul>\n<li>8 ounces semisweet or bittersweet chocolate (aim for 61 percent cacao) (Chocolate chips work in a pinch.)<\/li>\n<li>1 cup heavy cream<\/li>\n<li>1\/8 teaspoon coarse salt<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Coarsely chop chocolate. A serrated knife is best for the job; its sawlike teeth grab the chocolate, breaking it up.<\/li>\n<li>Bring cream just to a boil over medium-high heat.<\/li>\n<li>Pour over chocolate, and add salt.<\/li>\n<li>Let stand for 10 minutes (don&#8217;t stir &#8212; doing so will cool the ganache too quickly, making it grainy).<\/li>\n<li>Stir with a whisk until smooth and shiny to break up any pieces and emulsify cream and chocolate.<\/li>\n<li>Chocolate will often settle on the bottom or sides of the bowl.<\/li>\n<li>Scrape the dish with a rubber spatula to incorporate all of it.<\/li>\n<\/ol>\n<p>To make a whipped filling or frosting:<\/p>\n<ol>\n<li>Let ganache cool to room temperature, stirring often, 45 minutes to 1 hour.<\/li>\n<li>Beat it with a mixer on medium-high speed until paler and fluffy, 2 to 4 minutes.
