{"id":519,"date":"2014-08-31T12:03:19","date_gmt":"2014-08-31T18:03:19","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=519"},"modified":"2016-05-20T14:17:43","modified_gmt":"2016-05-20T20:17:43","slug":"lobster-baked-macaroni-and-cheese","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/lobster-baked-macaroni-and-cheese.html","title":{"rendered":"Lobster Baked Macaroni and Cheese"},"content":{"rendered":"<p><em>American Cruise Lines had a 7 day Lobster Cruise along the coast of Maine &#8211; lobster breakfast, lunch and dinner. \u00a0YUM!<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>16 oz elbow macaroni, dry<\/li>\n<li>1 Tab butter plus 1\/4 cup butter<em> divided<\/em><\/li>\n<li>1\/4 c flour<\/li>\n<li>1 Tab Dijon mustard<\/li>\n<li>1 tsp pepper<\/li>\n<li>1\/2 tsp Kosher salt<\/li>\n<li>1 Tab Old Bay seasoning<\/li>\n<li>1\/4 tsp paprika<\/li>\n<li>2 1\/2 c heavy cream<\/li>\n<li>1 1\/2 c Swiss cheese, shredded<\/li>\n<li>1 12 c cheddar cheese, shredded<\/li>\n<li>1 1\/2 c smoked Gouda cheese shredded<\/li>\n<li>1 c siago cheese, grated<\/li>\n<li>3 lbs lobster meat, picked<\/li>\n<\/ul>\n<p><strong>Topping:<\/strong><\/p>\n<ul>\n<li>2 c panko bread crumbs<\/li>\n<li>6 Tab butter, melted<\/li>\n<li>1 1\/2 c cheddar cheese, shredded<\/li>\n<li>1\/4 c Parmesan cheese<\/li>\n<\/ul>\n<p><b>Instructions:<\/b><\/p>\n<ol>\n<li>Preheat oven\u00a0350\u00ba.<\/li>\n<li>Cook macaroni al dente.<\/li>\n<li>Drain and rinse in cold water.<\/li>\n<li>In a large saucepan, melt buter.<\/li>\n<li>Stir in \u00a0flour, pepper, salt and paprika until smooth.<\/li>\n<li>Gradually add mustard and cream.<\/li>\n<li>Bring to a boil; \u00a0cook and stir for 2 minutes or until thickened.<\/li>\n<li>Stir in the cheese, mix until blended.<\/li>\n<li>Remove from heat, fold in macaroni and lobster.<\/li>\n<li>Transfer to a greased 9&#215;13 baking dish or individual casserole dishes.<\/li>\n<li>In a small bowl, combine panko, butter and cheese.<\/li>\n<li>Sprinkle on macaroni mixture.<\/li>\n<li>Bake for 15 &#8211; 20 minutes or until golden brown.<\/li>\n<li>Let stand for 5 minutes before serving.<\/li>\n<\/ol>\n<p><strong>Serves:<\/strong> \u00a08<\/p>\n<p><strong>Source: \u00a0Executive Chef, American Cruise Lines<\/strong><\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>American Cruise Lines had a 7 day Lobster Cruise along the coast of Maine &#8211; lobster breakfast, lunch and dinner. \u00a0YUM!
