Lesson learned &#8211; freeze bananas peeled!<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 1\/4 c flour<\/li>\n<li>1 c oats<\/li>\n<li>2\/3 c sugar<\/li>\n<li>1 1\/2 tsp baking powder<\/li>\n<li>1 tsp baking soda<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>1 egg<\/li>\n<li>1 3\/4 c mashed ripe bananas (5-6 bananas)<\/li>\n<li>1\/3 c butter, melted<\/li>\n<li>1 c cranberries (I used dried)<\/li>\n<\/ul>\n<p><strong>Instructions:<\/strong><\/p>\n<ol>\n<li>Preheat oven to\u00a0375\u00ba.<\/li>\n<li>Grease muffin tins, or better yet, use paper liners.<\/li>\n<li>Combine the first 6 ingredients in a mixing bowl.<\/li>\n<li>Mix well.<\/li>\n<li>Beat together egg, bananas, and melted butter until smooth.<\/li>\n<li>Add to dry ingredients.<\/li>\n<li>Stir to blend.<\/li>\n<li>Stir in cranberries just until combined.<\/li>\n<li>Spoon batter into prepared muffing pan, filling almost to the top.<\/li>\n<li>Bake for 20-25 minutes or until the top springs back when lightly touched.<\/li>\n<\/ol>\n<p><strong>Serves:<\/strong> 12 muffins or 24 mini muffing (or a little more)<\/p>\n<p><strong>Source:<\/strong> \u00a0Food.com<\/p>\n","protected":false},"excerpt":{"rendered":"<p>The banana tree produced a good size stalk of small bananas. \u00a0They all ripen at once, of course. \u00a0Good muffins &#8211; freeze nicely and the dough can sit in the frig over night.\u00a0\u00a0 P.S.
