just do a little long division.\u00a0 (Of course, you remember fractions from fourth grade. . . . )<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>19 lb chicken\u00a0tenders<\/li>\n<li>1 lb\u00a0butter, room temperature<\/li>\n<li>4 c\u00a0flour<\/li>\n<li>1 1\/2 c\u00a0olive oil<\/li>\n<li>3 c dry white wine<\/li>\n<li>2 1\/4 c fresh lemon juice<\/li>\n<li>3\u00a0c chicken broth<\/li>\n<li>1 1\/2 c drained capers<\/li>\n<li>1 1\/2 c chopped fresh parsley<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Sprinkle chicken with salt and pepper.<\/li>\n<li>Mix 12 tablespoon butter (1 1\/2 sticks) and\u00a06 tablespoons ( about 1\/3 cup) flour in small bowl until smooth.<\/li>\n<li>Place additional flour in shallow baking dish.<\/li>\n<li>Dip chicken into flour to coat.<\/li>\n<li>Shake off excess.<\/li>\n<li>Heat\u00a0some oil in a heavy large skillet.<\/li>\n<li>Add some chicken tenders.<\/li>\n<li>Cook until golden and cooked through, about 3 minutes per side.\u00a0 Do no crowd them or they will not brown.<\/li>\n<li>Transfer chicken to platter.<\/li>\n<li>Repeat, adding oil as necessary, until all chicken has been cooked.<\/li>\n<li>Tent with foil to keep warm.<\/li>\n<li>Bring wine, lemon juice and broth to boil in the skillet over medium-high heat.<\/li>\n<li>Whisk in butter-flour mixture.<\/li>\n<li>Boil until sauce thickens slightly, about 2 minutes.<\/li>\n<li>Stir in capers, parsley and remaining\u00a0 butter.<\/li>\n<li>Season sauce to taste with salt and pepper.<\/li>\n<li>Pour sauce over chicken and serve.<\/li>\n<\/ol>\n<p><strong>Serves:\u00a0\u00a0<\/strong> 50 &#8211;
