{"id":5396,"date":"2018-02-11T11:21:37","date_gmt":"2018-02-11T18:21:37","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=5396"},"modified":"2018-02-11T11:21:37","modified_gmt":"2018-02-11T18:21:37","slug":"new-england-clam-chowder-2","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/new-england-clam-chowder-2.html","title":{"rendered":"New England Clam Chowder"},"content":{"rendered":"<p><em>&#8220;From the daughter of a Newton, Massachusetts gal.&#8221;\u00a0 This is a wild variation on boring old New England chowder &#8211; chorizo, red pepper flakes takes it to a new place.\u00a0 Delish!!<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2 Tab unsalted butter<\/li>\n<li>2 large leeks (white and light green parts) diced and well rinsed<\/li>\n<li>2 medium garlic cloves, grated<\/li>\n<li>2 tsp crushed red pepper flakes<\/li>\n<li>Kosher salt<\/li>\n<li>2 (8 oz) bottles clam juice<\/li>\n<li>1 cup cooked chopped clams<\/li>\n<li>2 Tab canola oil<\/li>\n<li>8 oz Spanish chorizo sausages<\/li>\n<li>2 green celery stalks, sliced 1\/2 inch thick<\/li>\n<li>4 medium Yukon Gold potatoes cut in 1\/4 inch dice<\/li>\n<li>2 bay leaves<\/li>\n<li>3 c heavy cream<\/li>\n<li>2 c half and half cream<\/li>\n<li>freshly ground black pepper<\/li>\n<li>2 tsp\u00a0Tabasco sauce<\/li>\n<li>2 Tab Worcestershire sauce<\/li>\n<li>2 lb littleneck or Manilo clams, scrubbed<\/li>\n<li>4 sprigs fresh dill, stems and all, coarsely chopped<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Make the soup base:\n<ol>\n<li>In a large, heavy bottomed pot milt the butter over medium heat.<\/li>\n<li>Add the leeks, garlic and red pepper flakes.<\/li>\n<li>Season with salt\u00a0and cook until the leeks are translucent, 5 &#8211; 8 minutes.<\/li>\n<li>Add the clam juice and chopped clams.<\/li>\n<li>Bring to a simmer, then remove from the heat and keep warm.<\/li>\n<\/ol>\n<\/li>\n<li>Cook the chorizo and celery:\n<ol>\n<li>Heat a large sauce pan over medium heat.<\/li>\n<li>Add 1 Tablespoon oil and the chorizo and cook until crispy, 5 &#8211; 8 minutes.<\/li>\n<li>Using a slotted spoon, transfer the chorizo to a paper towel to drain.<\/li>\n<li>Heat the residual fat in the pan, add the celery and saute for 2 &#8211; 3 minutes.<\/li>\n<li>Season with salt.<\/li>\n<li>Remove with a slotted spoon.<\/li>\n<\/ol>\n<\/li>\n<li>Meanwhile, cook the potatoes:\n<ol>\n<li>In another pot combine the diced potatoes, bay leaves, cream, and half-and-half with 2 teaspoon salt and 1 teaspoon pepper.<\/li>\n<li>Bring the mixture to a gentle simmer and cook until the potatoes are tender, 10 &#8211; 12 minutes.<\/li>\n<li>Add the Worcestershire and Tabasco.<\/li>\n<li>Stir to blend.<\/li>\n<\/ol>\n<\/li>\n<li>Cook the clams:\n<ol>\n<li>Put a large, heavy-bottomed pot on the stove and add the remaining 1 Tablespoon oil and heat over medium heat.<\/li>\n<li>Add the clams, cover the pot and cook until they pop open, 8 &#8211; 10 minutes (discard any that do not open.)<\/li>\n<li>Put the clams in a colander and reserve the cooking liquid.<\/li>\n<\/ol>\n<\/li>\n<li>Finish the\u00a0 soup:\n<ol>\n<li>There is a good chance that there will be grit in the clam cooking liquid.<\/li>\n<li>Strain it through a double layer of cheese cloth or a coffee filter into a bowl and add it to the leek mixture.<\/li>\n<li>Combine with the potato mixture.<\/li>\n<li>Add the clams in their shells, the celery and the dill.<\/li>\n<li>Discard the bay leaves.<\/li>\n<li>Taste for seasoning.<\/li>\n<li>Top with chorizo just before serving.<\/li>\n<\/ol>\n<\/li>\n<\/ol>\n<p><strong>Serves:\u00a0 <\/strong>6 &#8211; 8<\/p>\n<p><strong>Source:\u00a0\u00a0<\/strong>The Home Cook:\u00a0 Recipes to Know by Heart, Alex Guarnaschelli<\/p>\n<h1><\/h1>\n","protected":false},"excerpt":{"rendered":"<p>&#8220;From the daughter of a Newton, Massachusetts gal.&#8221;\u00a0 This is a wild variation on boring old New England chowder &#8211; chorizo, red pepper flakes takes it to a new place.\u00a0 Delish!!
