{"id":5533,"date":"2018-05-02T17:24:41","date_gmt":"2018-05-02T23:24:41","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=5533"},"modified":"2026-03-14T16:38:27","modified_gmt":"2026-03-14T22:38:27","slug":"margies-southwest-soup-for-50","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/margies-southwest-soup-for-50.html","title":{"rendered":"Margie&#8217;s Southwest Soup (for 50)"},"content":{"rendered":"<hr \/>\n<p><em>This is the original Margie&#8217;s Southwest Tomato Soup.\u00a0 It also on the blog in a smaller version.\u00a0 You can easily add cooked chicken or beef (ground or diced) or fish\/shrimp at the end.\u00a0\u00a0<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>4 &#8211; 5 lb. box of tomatoes<\/li>\n<li>6 red\/yellow peppers<\/li>\n<li>1 lb. frozen corn<\/li>\n<li>2 large yellow onions, chopped<\/li>\n<li>3 quarts vegetable broth<\/li>\n<li>48 oz. salsa, medium heat<\/li>\n<li>2 stalks celery, chopped<\/li>\n<li>5 Tab (1 oz) cumin<\/li>\n<li>5 Tab garlic salt<\/li>\n<li>2 Tab (0.5 oz) paprika<\/li>\n<li>2 Tab (0.5 oz) smoked paprika<\/li>\n<li>salt and pepper to taste<\/li>\n<li>olive oil<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<p>Prep Tomatoes:<br \/>\n1. Split tomatoes across the middle (equatorially).<br \/>\n2. Loosely seed over a strainer.<br \/>\n3. Retain the juice.<br \/>\n4. Put on a baking sheet (teflon), face down.<br \/>\n5. Spray cooking oil on top.<br \/>\n6. Roast at 400\u00b0 for about 30 minutes, until dark brown or black skin (not quite charred)<br \/>\n7. Cool.<br \/>\n8. Remove skins.<br \/>\n9. Crush flesh.<br \/>\n10. Mix with juice from seeding.<\/p>\n<p>Prep Peppers:<br \/>\n1. Split peppers in half.<br \/>\n2. De-seed peppers.<br \/>\n3. Put peppers face-down on teflon baking sheet.<br \/>\n4. Spray cooking oil on top.<br \/>\n5. Roast at 400\u00b0 for about 30 minutes.<br \/>\n6. Peel skins.<br \/>\n7. Dice.<\/p>\n<p>Prep Corn (optional)<br \/>\n1. Brown frozen corn. This can be done in a frying pan, or on a baking sheet with a creme brulee torch. The idea is to get a little char on it for flavor.<\/p>\n<p>Make Soup:<br \/>\n1. Sautee onions in olive oil to golden brown.<br \/>\n2. Dump everything into a pot &#8212; tomatoes, peppers, salsa, vegetables, broth.<br \/>\n3. Bring to a simmer.<br \/>\n4.
