{"id":5811,"date":"2018-04-28T10:37:28","date_gmt":"2018-04-28T16:37:28","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=5811"},"modified":"2018-04-28T10:37:28","modified_gmt":"2018-04-28T16:37:28","slug":"onion-marmalade","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/onion-marmalade.html","title":{"rendered":"Onion Marmalade"},"content":{"rendered":"<p><em>I could eat this stuff by the spoonful!!\u00a0 It is good on beef, pork, chicken.\u00a0 Use it as a sandwich spread.\u00a0 Great on hamburgers.\u00a0\u00a0<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 Tab Olive oil<\/li>\n<li>4 medium onions, thinly sliced (about 8 cups)<\/li>\n<li>Kosher salt and freshly ground black pepper<\/li>\n<li>2\/3 c balsamic vinegar<\/li>\n<\/ul>\n<p><strong>Instructions:<\/strong><\/p>\n<ol>\n<li>Heat the oil in a large skillet over medium heat until it slides easily across the pan.<\/li>\n<li>Add the onions, salt, and pepper and cook, stirring occasionally, for about 20 minutes, until the onions are soft.<\/li>\n<li>Reduce the heat to medium-low.<\/li>\n<li>Cook, stirring frequently, for about 10 minutes, until the onions appear dry.<\/li>\n<li>Add the vinegar.<\/li>\n<li>Reduce the heat to low.<\/li>\n<li>Continue cooking, stirring occasionally, for about 1 hour, until the onions are soft and dry.<\/li>\n<li>Serve warm or at room temperature.<\/li>\n<li>Store the marmalade in the refrigerator.
