{"id":5815,"date":"2018-04-28T10:53:13","date_gmt":"2018-04-28T16:53:13","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=5815"},"modified":"2019-01-21T17:29:54","modified_gmt":"2019-01-22T00:29:54","slug":"grilled-vegetables","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/grilled-vegetables.html","title":{"rendered":"Grilled Vegetables"},"content":{"rendered":"<p><em>Like roasted vegetable, just about anything goes.\u00a0 The clue is don&#8217;t move them around and watch the cooking time.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>3 red bell peppers, seeded and halved<\/li>\n<li>3 yellow squash (about 1 pound total), sliced lengthwise into 1\/2-inch-thick rectangles<\/li>\n<li>3 zucchini (about 12 ounces total), sliced lengthwise into 1\/2-inch-thick rectangles<\/li>\n<li>3 Japanese eggplant (12 ounces total), sliced lengthwise into 1\/2-inch-thick rectangles<\/li>\n<li>12 cremini mushrooms<\/li>\n<li>1 bunch (1-pound) asparagus, trimmed<\/li>\n<li>12 green onions, roots cut off<\/li>\n<li>1\/4 c plus 2 Tab olive oil<\/li>\n<li>Salt and freshly ground black pepper<\/li>\n<li>3 Tab balsamic vinegar<\/li>\n<li>2 garlic cloves, minced<\/li>\n<li>1 tap chopped fresh Italian parsley leaves<\/li>\n<li>1 teaspoon chopped fresh basil leaves<\/li>\n<li>1\/2 teaspoon finely chopped fresh rosemary leaves<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Place a grill pan over medium-high heat or prepare the barbecue (medium-high heat).<\/li>\n<li>Brush the vegetables with 1\/4 cup of the oil to coat lightly.<\/li>\n<li>Sprinkle the vegetables with salt and pepper.<\/li>\n<li>Working in batches, grill the vegetables until tender and lightly charred all over.<\/li>\n<li>\u00a0The key to getting those great grill marks is to not shift the vegetables too frequently once they&#8217;ve been placed on the hot grill.<\/li>\n<li>Arrange the vegetables on a platter.<\/li>\n<li>Meanwhile, whisk the remaining 2 tablespoons of oil, balsamic vinegar, garlic, parsley,<br \/>\nbasil, and rosemary in a small bowl to blend.<\/li>\n<li>Add salt and pepper to taste.<\/li>\n<li>Drizzle the herb mixture over the vegetables.<\/li>\n<li>Serve the vegetables, warm or at room temperature.<\/li>\n<\/ol>\n<p><strong>Timing:<\/strong><\/p>\n<ol>\n<li>about 8 to 10 minutes for the bell peppers;<\/li>\n<li>7 minutes for the yellow squash, zucchini, eggplant, and mushrooms;<\/li>\n<li>4 minutes for the asparagus and green onions.<\/li>\n<\/ol>\n<p><strong>Serves:\u00a0\u00a0<\/strong> 6<\/p>\n<p><strong>Source:\u00a0\u00a0<\/strong>Giada De Laurentiis\u00a0 Show: Everyday Italian | Episode: Al Fresco Dining<\/p>\n<p><strong>Other things to grill:<\/strong><\/p>\n<ul>\n<li>Portabella Mushrooms<\/li>\n<li>Yellow Peppers<\/li>\n<li>White\/Baby Portabella Mushrooms (on skewers)<\/li>\n<li>Corn on the Cob (with many variations &#8211; Google it)<\/li>\n<li>Leeks<\/li>\n<li>Tomatoes &#8211; Roma<\/li>\n<li>Romaine<\/li>\n<li>Brussels Sprouts (on skewers)<\/li>\n<li>Artichokes (cut in half)<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Like roasted vegetable, just about anything goes.\u00a0 The clue is don&#8217;t move them around and watch the cooking time.
