{"id":5963,"date":"2018-05-19T05:12:48","date_gmt":"2018-05-19T11:12:48","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=5963"},"modified":"2021-07-03T07:45:03","modified_gmt":"2021-07-03T13:45:03","slug":"quick-and-easy-potato-salad","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/quick-and-easy-potato-salad.html","title":{"rendered":"Quick and Easy Potato Salad"},"content":{"rendered":"<p><em>An interesting variation on potato salad.\u00a0 It turns out a light brown color because of the onion soup mix &#8211; a bit odd, but tastes good &#8211; like onion soup dip.\u00a0 I added a pound of bacon to a double recipe because, you know, BACON.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2 lbs\u00a0russet potatoes, peeled and cut into 3\/4 in pieces<\/li>\n<li>1 pinch\u00a0salt<\/li>\n<li>2 celery ribs, finely diced<\/li>\n<li>1\u20442 medium\u00a0red onion<\/li>\n<li>2 large\u00a0hard-boiled eggs\u00a0(optional)<\/li>\n<li>3 Tabs\u00a0sour cream<\/li>\n<li>1\u2044 c mayonnaise<\/li>\n<li>1 tsp mustard<\/li>\n<li>1 tsp lemon juice<\/li>\n<li>2 -3 Tab onion soup mix (I put 3 but I like the onion&#8217;s)<\/li>\n<li>salt and pepper<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Put potato pieces in a large saucepan and add water to cover the potatoes by one inch.<\/li>\n<li>Salt the water.<\/li>\n<li>Bring to a gentle boil over medium high heat.<\/li>\n<li>Reduce heat and allow to simmer for 5 to 8 minutes until potatoes are tender.<\/li>\n<li>Drain potatoes in a colander and allow to cool.<\/li>\n<li>In the meantime, mix sour cream, mayonnaise, mustard, lemon juice, onion soup mix, salt, and pepper.<\/li>\n<li>Transfer potatoes into a medium bowl.<\/li>\n<li>Add celery, egg and onion.<\/li>\n<li>Pour dressing over top and mix gently.<\/li>\n<li>Chill for about an hour in the refrigerator.
