{"id":5970,"date":"2018-05-17T09:47:19","date_gmt":"2018-05-17T15:47:19","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=5970"},"modified":"2018-05-17T09:47:19","modified_gmt":"2018-05-17T15:47:19","slug":"sacramento-salad","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/sacramento-salad.html","title":{"rendered":"Sacramento Salad"},"content":{"rendered":"<p><em>Feel free to vary the lettuce type and the kind of nuts, maybe even use pears or cantaloupe\u00a0for the fruit.\u00a0 Salads are usually built by inspiration and what is on hand.<\/em><\/p>\n<p><strong>Ingredients:\u00a0<\/strong><\/p>\n<ul>\n<li>3 heads Romaine lettuce<\/li>\n<li>1\/2 lb (8 oz) blue cheese chunks<\/li>\n<li>6 whole red apples, cored and sliced very thin<\/li>\n<li>roasted walnuts<\/li>\n<li>1 1\/4 cup olive oil<\/li>\n<li>1\/4 c\u00a0 Dijon mustard<\/li>\n<li>1\/4 c honey<\/li>\n<li>1\/4 c wine vinegar<\/li>\n<li>Salt and freshly ground black pepper<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Preheat oven to 350\u00b0.<\/li>\n<li>Spread nuts in a single layer on a baking sheet.<\/li>\n<li>Roast\u00a0for 5 to 10 minutes.<\/li>\n<li>Toss the nuts around occasionally to ensure even cooking. Nuts are done when they appear a shade darker and smell toasty.<\/li>\n<li>Add the greens, cheese and apples into a large salad bowl.<\/li>\n<li>Mix the olive oil, Dijon,\u00a0 honey and vinegar in a small jar and sprinkle with and salt<br \/>\nand pepper.<\/li>\n<li>Put the lid on the jar and shake well to mix.<\/li>\n<li>Pour a little of the salad dressing over the top of the salad and toss to combine.
