{"id":60,"date":"2007-05-13T12:26:47","date_gmt":"2007-05-13T18:26:47","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/french-toast-a-la-dave.html"},"modified":"2017-02-07T13:43:09","modified_gmt":"2017-02-07T20:43:09","slug":"french-toast-a-la-dave","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/french-toast-a-la-dave.html","title":{"rendered":"French Toast a la Dave"},"content":{"rendered":"<p>Dave the Hubby says:\u00a0 <em>Breakfasts on Saturday, growing up, were always something battered, a rotating menu of pancakes, waffles (both made via Bisquik) and french toast.\u00a0 Years later, I did some research and cobbled together this recipe.\u00a0 I always keep slowly ratcheting up the extra spices &#8212; which should be, of course, to taste, the point here being that there&#8217;s more to french toast than egg and milk batter.\u00a0 Spice it up!<\/em><\/p>\n<p><strong>Ingredients<\/strong>:<\/p>\n<ul>\n<li>4 eggs, whole and beaten<\/li>\n<li>1 cup milk<\/li>\n<li>1 tsp sugar<\/li>\n<li>1\u00bd \u00a0tsp vanilla<\/li>\n<li>1\u00bd \u00a0tsp cinnamon<\/li>\n<li>1 tsp nutmeg<\/li>\n<li>4 slices of bread<\/li>\n<\/ul>\n<p><strong>A note on bread<\/strong>:\u00a0 Bread selection is important in French Toast. You want something that will soak up the batter quickly and thoroughly, but won&#8217;t get soggy and tear. Heavier breads seem to do better; thicker slices work, too, but may not soak through. Make sure that if the bread has a flavor, it complements the spices above and whatever toppings you&#8217;re putting on. \u00a0I prefer something on the soft side, but thin\/sandwich cut.\u00a0 Other people prefer a thick slice.\u00a0 The bread should be soft enough to soak up the egg\/milk mix, hearty enough to maintain its integrity when dredging and flipping, and of a taste not to conflict with the spices or topping.\u00a0 White or buttermilk work great.<\/p>\n<p><strong>A note on toppings<\/strong>:\u00a0 I&#8217;m a butter and maple syrup guy.\u00a0 Never been much into the powdered sugar, or the fruit syrup, but your mileage may vary.\u00a0 Whatever, make sure you have plenty on hand before starting the toast!<\/p>\n<p><strong>Directions<\/strong>:<\/p>\n<ol>\n<li>Blend all of the above in a bowl.\u00a0 Pour into a 9&#215;13 pan.<\/li>\n<li>Heat flat griddle on medium-low (about 1\/3 of the way on our stove).<\/li>\n<li>Dredge pieces of bread through the mixture, getting them battered on both sides.\u00a0 Let any excess drip off for a second, then put on the griddle.\u00a0 Cook on both sides until a thin brown crust appears.\u00a0 Toast should be crispy on the outside, still a bit tender (though not goopy) on the inside.<\/li>\n<li>Top with butter and syrup, or your favorite toppings (see above)<\/li>\n<\/ol>\n<p><strong>Serves<\/strong>:\u00a0 Four pieces, or so my notes say.\u00a0 I almost always double the recipe, and it goes further than 8 slices.\u00a0 Most adults will eat 4, but poll your guests before starting.\u00a0 The mix, being eggs and milk, probably won&#8217;t keep long.\u00a0 You may be better off making as much toast as you can and freezing the leftovers for mid-week snacking.<\/p>\n<p><strong>Source<\/strong>:\u00a0 Dave the Hubby<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Dave the Hubby says:\u00a0 Breakfasts on Saturday, growing up, were always something battered, a rotating menu of pancakes, waffles (both made via Bisquik) and french toast.\u00a0 Years later, I did some research and cobbled together this recipe.\u00a0 I always keep slowly ratcheting up the extra spices &#8212;
