{"id":6045,"date":"2018-06-27T06:05:21","date_gmt":"2018-06-27T12:05:21","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=6045"},"modified":"2018-07-05T06:01:30","modified_gmt":"2018-07-05T12:01:30","slug":"caprese-brie","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/caprese-brie.html","title":{"rendered":"Caprese Brie"},"content":{"rendered":"<p><em>This was originally named Campfire Caprese Brie but, let me tell you,\u00a0 It is so good you will make it in the oven, over the barbecue, or on the engine of your car!\u00a0 (There used to be a whole series of recipes you could cook on the way to your destination.)\u00a0 We ate the leftovers for breakfast.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 1\/2 c .quartered cherry tomatoes<\/li>\n<li>3\u00a0cloves garlic, minced<\/li>\n<li>1\/4 c.\u00a0extra-virgin olive oil<\/li>\n<li>kosher salt<\/li>\n<li>freshly ground black pepper<\/li>\n<li>pinch red pepper flakes<\/li>\n<li>1\u00a0large wheel brie<\/li>\n<li>balsamic glaze, for drizzling (You can buy this or make it &#8211; see below)<\/li>\n<li>1\/4 c.\u00a0thinly sliced basil, for garnish<\/li>\n<li>1\u00a0baguette, sliced, for serving<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>In a large bowl, combine cherry tomatoes and\u00a0garlic.<\/li>\n<li>Toss with\u00a0olive oil.<\/li>\n<li>Season, to taste, with salt, pepper, and red pepper flakes.<\/li>\n<li>Place brie in a cast iron skillet.\u00a0 (or heatproof dish)<\/li>\n<li>Top with tomato mixture.<\/li>\n<li>Place over campfire (or on a hot grill), and cook until brie is melted, about 20 minutes. (Just because the brie isn&#8217;t oozing, doesn&#8217;t mean it&#8217;s not hot and ready. To test,\u00a0poke sides of the wheel with a knife to see if cheese is melty inside.)\u00a0 (or in the oven 375\u00b0)<\/li>\n<li>Drizzle with balsamic glaze and garnish with basil.<\/li>\n<li>Serve warm with baguette slices.<\/li>\n<\/ol>\n<p><strong>Serves:\u00a0 <\/strong>10 &#8211; 12<\/p>\n<p><strong>Source:\u00a0<\/strong>Delish &#8211;\u00a0 Chelsea Lupkin<\/p>\n<p style=\"text-align: center;\"><strong>Balsamic Glaze<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>16 oz, fluid good balsamic vinegar<\/li>\n<li>1\/2 c sugar<\/li>\n<li>salt<\/li>\n<\/ul>\n<p><b>Directions:<\/b><\/p>\n<ol>\n<li>Pour balsamic vinegar into a heavy pan.<\/li>\n<li>Add regular granulated sugar.<\/li>\n<li>Add a couple pinches of salt.<\/li>\n<li>Stir to combine.<\/li>\n<li>Place over medium heat.<\/li>\n<li>Once the balsamic vinegar comes to a boil, stir again, and casually watch it.
