{"id":6122,"date":"2018-06-14T14:04:13","date_gmt":"2018-06-14T20:04:13","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=6122"},"modified":"2021-05-28T15:20:50","modified_gmt":"2021-05-28T21:20:50","slug":"scandinavian-potato-salad","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/scandinavian-potato-salad.html","title":{"rendered":"Scandinavian  Potato Salad"},"content":{"rendered":"<p><em>Get ready for summer.\u00a0 Wonderful with grilled salmon or chicken.\u00a0\u00a0<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2 lbs small red potatoes<\/li>\n<li>salt<\/li>\n<li>1 c mayonnaise<\/li>\n<li>1\/4 c buttermilk (or 1 T\u00a0 lemon juice\/white vinegar, fill to 1 c with milk, let sit 5 min)<\/li>\n<li>2 T Dijon mustard<\/li>\n<li>2 T whole-grain mustard<\/li>\n<li>1\/2 c fresh dill, chopped<\/li>\n<li>2 stalks celery, diced<\/li>\n<li>1\/2 p diced red onion<\/li>\n<li>freshly ground black pepper<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Cook potatoes with 1 T salt in a large pot of water.
