{"id":6126,"date":"2018-06-20T15:24:57","date_gmt":"2018-06-20T21:24:57","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=6126"},"modified":"2018-06-20T15:24:57","modified_gmt":"2018-06-20T21:24:57","slug":"asparagus-salad-with-shrimp","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/asparagus-salad-with-shrimp.html","title":{"rendered":"Asparagus Salad with Shrimp"},"content":{"rendered":"<p><em>A good luncheon salad.\u00a0 You can use bay shrimp as well.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 lb asparagus, woody stem ends removed<\/li>\n<li>1\/2 lb pink salad shrimp, cooked, shelled<\/li>\n<li>1\/4 c extra-virgin olive oil<\/li>\n<li>1 garlic clove, minced (1\/2 teaspoon to 1 1\/2 teaspoons, depending on how much you like fresh garlic)<\/li>\n<li>1 Tab lemon juice (more to taste)<\/li>\n<li>1 Tab minced fresh parsley<\/li>\n<li>Salt and black pepper to taste<\/li>\n<\/ul>\n<p><strong>Directions:\u00a0<\/strong><\/p>\n<ol>\n<li>Bring a medium pot of water to a boil and salt it well.<\/li>\n<li>Add the asparagus to the boiling water and boil for 3 minutes.<\/li>\n<li>Use a slotted spoon to remove the asparagus to a bowl of ice water to cool.\u00a0 (Or cook them until al dente in the microwave or a steam oven.)<\/li>\n<li>Add the shrimp\u00a0to the pot of boiling water (unless they are pre-cooked).<\/li>\n<li>Boil them for 2-3 minutes, until barely cooked through.<\/li>\n<li>Remove the shrimp.<\/li>\n<li>Drain well.<\/li>\n<li>Place them in to a large bowl.<\/li>\n<li>Slice the asparagus spears thinly on the diagonal\u00a0until you get close to the tip.<\/li>\n<li>Cut the asparagus tips off in one piece. (They look prettier that way.)<\/li>\n<li>Put the asparagus in the bowl with the shrimp.<\/li>\n<li>Add the remaining ingredients and toss to combine.<\/li>\n<li>Add salt and black pepper to taste.<\/li>\n<li>Add more lemon juice if desired, to taste.<\/li>\n<\/ol>\n<p><strong>Alternate Dressing &#8211; Pink Mayonnaise Dressing<\/strong><\/p>\n<ul>\n<li>1\/2 c mayonnaise<\/li>\n<li>1 tsp tomato paste<\/li>\n<li>1 garlic, crushed<\/li>\n<li>1 Tab fresh dill, finely chopped<\/li>\n<li>salt and white pepper to taste<\/li>\n<\/ul>\n<p>Mix well and toss with shrimp and asparagus.<\/p>\n<p><strong>Serves:\u00a0\u00a0<\/strong>4<\/p>\n<p><strong>Source:\u00a0\u00a0<\/strong>Simply Recipes: Elsie Bauer<\/p>\n","protected":false},"excerpt":{"rendered":"<p>A good luncheon salad.\u00a0 You can use bay shrimp as well.
