First tried for Thankgiving Dinner, 2007<\/em><\/p>\n<p><strong>Ingredients<\/strong>:<br \/> 3 c flour<br \/> 2 tsp baking powder<br \/> 1 tsp baking soda<br \/> 1 tbsp ground cinnamon<br \/> \u00bc&nbsp; tsp ground clove<br \/> 1\u00be&nbsp; tsp ground allspice<br \/> 1 tsp salt<br \/> \u00bd&nbsp; tsp ground nutmeg<br \/> &#8212;<br \/> 1\u00bd&nbsp; c sugar<br \/> 1 c (packed) golden brown sugar<br \/> 1 c butter (melted)<br \/> &#8212;<br \/> 5&nbsp;large eggs (at altitutde; 4 at sea level)<br \/> 29 oz. pumpkin<br \/> 1 tbsp vanilla extract<br \/> 1 tbsp grated orange peel<br \/> \u00be&nbsp;c raisins (optional)<br \/> \u00be&nbsp;c sweetened flaked coconut, plus extra for garnish (optional)<\/p>\n<p><strong>Instructions<\/strong>:<\/p>\n<ol>\n<li> Preheat oven to 350F.<\/li>\n<li> Butter a 9&#215;13 pan.<\/li>\n<li> Sift flour and spices into a medium bowl.<\/li>\n<li> Beat both sugars and oil into a large bowl until combined into a grainy mixture.<\/li>\n<li> Add eggs one at a time, beating until well blended after each addition.<\/li>\n<li> Add pumpkin, vanilla, orange peel, and beat until well blended.<\/li>\n<li> Add flour mixture, and beat until just incorporated.<\/li>\n<li> (Optional) Stir in raisins and coconut.<\/li>\n<li> Pour into pan; bake for about 1 hour (when tester inserted into center comes out clean).<\/li>\n<li> After cool, top with a <a href=\"https:\/\/hill-kleerup.org\/blog\/margie\/022397.html\" target=\"_blank\">frosting<\/a>.<\/li>\n<\/ol>\n<p><em>This cake comes out incredibly moist &#8212; it almost seams undercooked, but it&#8217;s not.&nbsp; It can be made a day ahead of time, covered and refrigerated; let stand at room temp an hour before serving.<\/em><\/p>\n<p><strong>Variations<\/strong>:&nbsp; This recipe is originally designed as a layer cake &#8212; using 15 oz. of pumpkin, and putting into two 9&#8243; cake pans.&nbsp; Originally set to use 2 tsp ginger instead of cloves, and canola oil instead of butter.<\/p>\n<p><strong>Source<\/strong>:&nbsp;
