{"id":6333,"date":"2018-08-06T16:17:01","date_gmt":"2018-08-06T22:17:01","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=6333"},"modified":"2018-08-06T16:17:17","modified_gmt":"2018-08-06T22:17:17","slug":"greek-salad","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/greek-salad.html","title":{"rendered":"Greek Salad"},"content":{"rendered":"<p><em>This healthy Greek salad is absolutely amazing when tossed in a light and refreshing lemon vinaigrette!<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 large head romaine lettuce (or 2 hearts)<\/li>\n<li>1 small red onion, thinly sliced<\/li>\n<li>1 cucumber, thinly sliced<\/li>\n<li>1\/2 c cherry tomatoes, halved (or 2 perfectly ripe Roma tomatoes)<\/li>\n<li>1\/4 cup sliced Kalamata olives<\/li>\n<li>1\/4 cup crumbled goat cheese<\/li>\n<li>Freshly ground black pepper, to taste<\/li>\n<li>1\/2 c olive oil<\/li>\n<li>1\/4 c wine vinegar<\/li>\n<li>1 clove garlic &#8211; mashed<\/li>\n<li>Zest of 1 lemon<\/li>\n<li>3 Tab freshly squeezed lemon juice<\/li>\n<li>1 1\/2 tablespoons sugar<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Whisk together olive oil, vinegar, garlic, lemon zest and juice and sugar in a small bowl.<\/li>\n<li>Set aside.<\/li>\n<li>Cut or tear the lettuce into bite size pieces.<\/li>\n<li>Place romaine lettuce in a large bowl.<\/li>\n<li>Top with red onion, cucumber, tomatoes, olives, goat cheese and pepper, to taste.<\/li>\n<li>Pour dressing on top of the salad.<\/li>\n<li>Gently toss to combine.<\/li>\n<li>Serve immediately.<\/li>\n<\/ol>\n<p><strong>Serves:\u00a0\u00a0<\/strong>4<\/p>\n<p><strong>Source:\u00a0<\/strong> GOK<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This healthy Greek salad is absolutely amazing when tossed in a light and refreshing lemon vinaigrette!
