In this version, you char the corn on the stovetop, though a trip to the grill wouldn&#8217;t hurt.<\/p>\n<p><strong> Ingredients:<\/strong><\/p>\n<ul>\n<li>2 Tab oil<\/li>\n<li>4 ears fresh corn, shucked,\u00a0kernels removed(about 3 cups fresh corn kernels)<\/li>\n<li>Kosher salt<\/li>\n<li>2 Tab mayonnaise<\/li>\n<li>2 oz feta or cotija cheese, finely crumbled<\/li>\n<li>1\/2 c finely sliced scallion greens<\/li>\n<li>1\/2 c fresh cilantro leaves, finely chopped<\/li>\n<li>1 jalape\u00f1o pepper, seeded and stemmed, finely chopped<\/li>\n<li>1 to 2 medium cloves garlic, pressed or minced on a microplane grater (about 1 to 2 teaspoons)<\/li>\n<li>1 Tab fresh juice from 1 lime<\/li>\n<li>Chili powder or hot chili flakes, to taste<\/li>\n<\/ul>\n<p><strong> Directions:<\/strong><\/p>\n<ol>\n<li>Heat oil in a large non-stick skillet or wok over high heat until shimmering.<\/li>\n<li>Add corn kernels.<\/li>\n<li>Season to taste with salt.<\/li>\n<li>Toss once or twice, and cook without moving until charred on one side, about 2 minutes.<\/li>\n<li>Toss corn, stir, and repeat until charred on second side, about 2 minutes longer.<\/li>\n<li>Continue tossing and charring until well charred all over, about 10 minutes total.<\/li>\n<li>Transfer to a large bowl.<\/li>\n<li>Add mayonnaise, cheese, scallions, cilantro, jalape\u00f1o, garlic, lime juice, and chili powder.<\/li>\n<li>Toss to combine.<\/li>\n<li>Taste and adjust seasoning with salt and more chili powder to taste.<\/li>\n<li>Serve immediately.<\/li>\n<\/ol>\n<p><strong>Serves:<\/strong> 4 as salad, 8 as dip<\/p>\n<p><strong>Source:<\/strong>\u00a0 Serious Eats<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Smoky, sweet, spicy, and tangy,\u00a0esquites\u00a0are the off-the-cob version of\u00a0elotes\u2014grilled Mexican street corn slathered with creamy, cheesy, lime-scented, chili-flecked sauce.
