It&#8217;s also a\u00a0substitute\u00a0for cooking\u00a0grilled chicken, steak, salmon and kabobs that will give it a charred surface &#8212; basically, it&#8217;s like\u00a0grilling\u00a0from the top instead of the bottom &#8211; but missing the smokey flavor.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2 lb haricot vert, trimmed (fancy green beans)<\/li>\n<li>48 fingerling potatoes<\/li>\n<li>4 Tab kosher salt<\/li>\n<li>1 \u00bd cups \u00a0red wine vinegar<\/li>\n<li>8\u00a0 Tab freshly squeezed lemon juice<\/li>\n<li>8 Tab Dijon mustard<\/li>\n<li>4 \u00a0Tab clover honey<\/li>\n<li>Salt and freshly ground black pepper<\/li>\n<li>4 \u00a0c extra-virgin Greek olive oil, plus more for drizzling<\/li>\n<li>Canola oil, for grilling<\/li>\n<li>1 \u00bd lbs feta, crumbled<\/li>\n<li>1 1\/2 c pitted kalamata olives<\/li>\n<li>8 \u00a0Tab lightly chopped fresh oregano<\/li>\n<li>Fresh parsley leaves, for garnish<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Bring a large pot of salted water to a boil and cook the haricot vert until al dente, about 90 seconds.<\/li>\n<li>Shock in ice water.<\/li>\n<li>Drain well.<\/li>\n<li>Chop in halves or thirds and reserve.<\/li>\n<li>Put the potatoes in a large pot, cover with 2 inches cold water and add 1 tablespoon salt.<\/li>\n<li>Bring to a boil and cook until a small knife inserted into the center of the potato meets with some resistance, about 5 minutes.<\/li>\n<li>Drain well, place on a baking sheet.<\/li>\n<li>Let cool slightly.<\/li>\n<li>Halve lengthwise.<\/li>\n<li>Whisk the vinegar, lemon juice, mustard, honey and salt and pepper.<\/li>\n<li>Slowly whisk in the olive oil until emulsified.<\/li>\n<li>Heat the grill to medium heat.<\/li>\n<li>Toss the potatoes with canola oil and sprinkle with salt and pepper.<\/li>\n<li>Grill until golden brown in spots, tossing occasionally, about 5 minutes.<\/li>\n<li>Remove and toss with some of the vinaigrette.<\/li>\n<li>Combine the potatoes, green beans, feta cheese, olives and oregano in a bowl.<\/li>\n<li>Toss with more of the vinaigrette.<\/li>\n<li>Taste and season with salt and pepper if necessary.<\/li>\n<li>Scatter the parsley leaves over the top and drizzle with a bit more olive oil.<\/li>\n<\/ol>\n<p><strong>Serves:\u00a0\u00a0<\/strong>24<\/p>\n<p><strong>Source:\u00a0 <\/strong>Bobby Flay<\/p>\n","protected":false},"excerpt":{"rendered":"<p>A tasty variation on a theme.\u00a0\u00a0The broiler in your oven is also an\u00a0alternative\u00a0to a\u00a0grill\u00a0pan for foods that will saute in a frying pan, such as vegetables.
