{"id":657,"date":"2014-09-18T15:20:21","date_gmt":"2014-09-18T21:20:21","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=657"},"modified":"2016-02-19T05:20:45","modified_gmt":"2016-02-19T12:20:45","slug":"boise-chicken-bites","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/boise-chicken-bites.html","title":{"rendered":"Boise Chicken Bites"},"content":{"rendered":"<p><em>This reminds me of some of the chicken dishes at the many Asian fast food places. \u00a0It is tasty!<\/em><\/p>\n<p><b>Ingredients: <\/b><\/p>\n<p><b>Sauce:<\/b><\/p>\n<ul>\n<li>1 can apricots (13 oz)<\/li>\n<li>1 piece ginger (\u00bd inch) peeled and shredded (A micro-plane makes this easy)<\/li>\n<li>1 Tab soy sauce<\/li>\n<li>2 tsp cornstarch<\/li>\n<li>1 Tab cold water<\/li>\n<li>1 green onion thinly sliced<\/li>\n<\/ul>\n<p><b>Chicken:<\/b><\/p>\n<ul>\n<li>3 lbs chicken tenders<\/li>\n<li>4 Tab butter<\/li>\n<li>2 Tab vegetable oil<\/li>\n<li>tooth picks<\/li>\n<\/ul>\n<p><b>Directions:<\/b><\/p>\n<p><b>Sauce: <\/b><\/p>\n<ol>\n<li>Drain the apricots, reserving the syrup.<\/li>\n<li>Combine 1\/4 c syrup with the ginger and apricots in a food processor and blend until smooth.<\/li>\n<li>Combine apricot pur\u00e8e with soy sauce in a sauce pan.<\/li>\n<li>Mix cornstarch and water.<\/li>\n<li>Add to sauce pan.<\/li>\n<li>Cook until thickened, stirring constantly. (If too thick, thin with reserve juice)<\/li>\n<\/ol>\n<p><b>Chicken:<\/b><\/p>\n<ol>\n<li>Rinse and pat dry.<\/li>\n<li>Cut chicken tender into 4 \u2013 5 pieces \u2013 approximately \u00be inch cubes.<\/li>\n<li>Saut\u00e9 in butter and oil for 5 minutes until golden brown.<\/li>\n<li>Place warm chicken in chaffing dish<\/li>\n<li>Pour sauce over chicken and mix to coat<\/li>\n<li>Sprinkle with green onion and serve with toothpicks<\/li>\n<\/ol>\n<p><b>Serves: <\/b>100-120Pieces<\/p>\n<p><b>Source: <\/b>Idaho \u00e0 la cARTe A Gallery of Treasures, Traditions and Tastes Beaux Arts Soci\u00e9t\u00e9<\/p>\n<p>&nbsp;<\/p>\n<p align=\"CENTER\">\n","protected":false},"excerpt":{"rendered":"<p>This reminds me of some of the chicken dishes at the many Asian fast food places. \u00a0It is tasty!
