It would also be good as a side dish with meats that don&#8217;t make much gravy.\u00a0 Mary brought this to Thanksgiving (We deep fry our turkeys &#8211; no pan drippings for gravy.)<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>Cooking spray<\/li>\n<li>1 3\/4 c uncooked farro<\/li>\n<li>2 Tab unsalted butter<\/li>\n<li>1 lb mixed fresh mushrooms\u00a0(such as shiitake caps, cremini, and oyster), chopped<\/li>\n<li>1 c chopped carrots<\/li>\n<li>2 Tab chopped fresh sage<\/li>\n<li>1 1\/2 Tab chopped garlic<\/li>\n<li>1\/4 c white miso<\/li>\n<li>1 c unsalted chicken stock<\/li>\n<li>4 oz fontina cheese, grated (about 1 cup)<\/li>\n<li>2 tsp sherry vinegar<\/li>\n<li>1 tsp black pepper<\/li>\n<li>1\/4 tsp kosher salt<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>\u00a0Preheat oven to 400\u00b0F.<\/li>\n<li>Lightly coat a 2-quart glass or ceramic baking dish with cooking spray.<\/li>\n<li>Cook farro according to package directions to yield about 4 cups.<\/li>\n<li>Drain and set aside.<\/li>\n<li>While farro cooks, melt butter in a large skillet over medium-high.<\/li>\n<li>Add mushrooms.<\/li>\n<li>Cook, stirring occasionally, until lightly browned, 6 to 8 minutes.<\/li>\n<li>Add carrots, sage, and garlic; cook, stirring occasionally, until tender, 5 to 6 minutes.<\/li>\n<li>Stir in miso.<\/li>\n<li>Cook, stirring constantly, 1 minute.<\/li>\n<li>Add stock; simmer until liquid is reduced by half, about 4 minutes.<\/li>\n<li>Remove from heat.<\/li>\n<li>Cool slightly.<\/li>\n<li>Combine cooked farro, mushroom mixture, cheese, vinegar, pepper, and salt in a large bowl.<\/li>\n<li>Spoon mixture into prepared baking dish.<\/li>\n<li>Bake at 400\u00b0F until top is lightly toasted, about 20 minutes.<\/li>\n<\/ol>\n<p><strong>Serves:\u00a0\u00a0<\/strong>12<\/p>\n<p><strong>Source:\u00a0\u00a0<\/strong>Cooking Light,\u00a0Robin Bashinsky, November 2018<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>While a miso-flavored whole-grain stuffing might not be traditional, the savory, earthy flavor is right at home on the holiday table.
