{"id":6901,"date":"2019-01-24T11:19:17","date_gmt":"2019-01-24T18:19:17","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=6901"},"modified":"2019-01-24T11:19:17","modified_gmt":"2019-01-24T18:19:17","slug":"pesto-cheese","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/pesto-cheese.html","title":{"rendered":"Pesto Cheese\u00a0\u00a0"},"content":{"rendered":"<p><em>Well, I had the list of ingredients but no recipe &#8211; so I made up the directions.\u00a0 Seemed reasonable to me.\u00a0 This obviously\u00a0makes enough for a crowd.\u00a0 Easy to half or quarter for a few.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 C pine nuts &#8211; toasted<\/li>\n<li>16 oz ricotta cheese<\/li>\n<li>16 oz cream cheese<\/li>\n<li>1 C pesto<\/li>\n<li>\u00a02 cucumbers &#8211; diced fine<\/li>\n<li>2 red bell peppers &#8211; diced fine<\/li>\n<li>French bread<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Dice the cucumbers &#8211; 1\/4 inch or so.<\/li>\n<li>Place in a strainer.<\/li>\n<li>Sprinkle with salt.<\/li>\n<li>Set aside.<\/li>\n<li>Toast the pine nuts &#8211; watch carefully.<\/li>\n<li>Dice the red peppers &#8211; 1\/4 inch<\/li>\n<li>Mix the ricotta and cream cheese.<\/li>\n<li>Stir in the pesto.<\/li>\n<li>Press the water out of the cucumbers.<\/li>\n<li>Stir in the cucumbers and peppers.<\/li>\n<li>Place in shallow bowl.<\/li>\n<li>Top with pine nuts.<\/li>\n<li>Serve with baguette slices or crackers.<\/li>\n<\/ol>\n<p><strong>Serves:\u00a0\u00a0<\/strong>Probably 50<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Well, I had the list of ingredients but no recipe &#8211; so I made up the directions.\u00a0 Seemed reasonable to me.\u00a0 This obviously\u00a0makes enough for a crowd.\u00a0 Easy to half or quarter for a few.
