{"id":6903,"date":"2019-01-24T10:41:33","date_gmt":"2019-01-24T17:41:33","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=6903"},"modified":"2019-01-24T10:41:33","modified_gmt":"2019-01-24T17:41:33","slug":"baked-brie-with-salsa-verde-nachos","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/baked-brie-with-salsa-verde-nachos.html","title":{"rendered":"Baked Brie\u00a0with Salsa Verde Nachos"},"content":{"rendered":"<p><em>Another variation on baked brie &#8211; Tex Mex this time.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 3 lb brie<\/li>\n<li>1\/2 c\u00a0 red onion &#8211; diced<\/li>\n<li>1 Tab garlic &#8211; minced<\/li>\n<li>1\/2 cup sweet corn.<\/li>\n<li>16 oz green salsa &#8211; Salsa Verde (buy or make from scratch)<\/li>\n<li>1\/2 c sun dried tomatoes in oil &#8211; diced (you can sometimes buy them this way) (or use 1 cup fresh tomatoes &#8211; whatever)<\/li>\n<li>1\/2 tsp chili pd<\/li>\n<li>4 cups tortilla chips<\/li>\n<li>Small plates<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Mix Salsa Verde, corn, onion, garlic,\u00a0 tomatoes.<\/li>\n<li>Place brie in a shallow ovenproof casserole or pan 2 inches wider than the cheese. (A cast iron frying pan works great.)<\/li>\n<li>Score the top of the brie in diamonds.\u00a0 (Don&#8217;t bother peeling it)<\/li>\n<li>Spoon salsa mix\u00a0around cheese.<\/li>\n<li>Dust cheese with ground New Mexico chili or chili powder (For something fancy, use a stencil &#8211; like a star or logo -cut out of a paper plate).<\/li>\n<li>Bake in a 400\u00b0 oven until melted in center, 8 to 10 minutes. (Or heat in a microwave oven at full power, 100%, for 4 to 6 minutes.)<\/li>\n<li>Keep hot on an electric warming tray or over a candle warmer to serve.<\/li>\n<li>Place chips on plate.<\/li>\n<li>Spoon cheese and salsa over tortilla chips.<\/li>\n<\/ol>\n<p><strong>Serves:\u00a0\u00a0<\/strong>\u00a0 Probably about 15<\/p>\n<p><strong>Source:\u00a0 <\/strong>Sort of based on\u00a0 Sunset Magazine,\u00a0November 1997<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Another variation on baked brie &#8211; Tex Mex this time.
