{"id":7080,"date":"2019-02-03T07:19:25","date_gmt":"2019-02-03T14:19:25","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=7080"},"modified":"2019-02-03T07:19:25","modified_gmt":"2019-02-03T14:19:25","slug":"endive-spoons-with-lemon-herb-goat-cheese","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/endive-spoons-with-lemon-herb-goat-cheese.html","title":{"rendered":"Endive &#8220;Spoons&#8221; with Lemon-Herb Goat Cheese"},"content":{"rendered":"<p><em>Really now, don&#8217;t you think you could squirt just about any flavored soft cheese on the endive and garnish it with a sprig of green stuff?<\/em><\/p>\n<p><strong>Ingredients:\u00a0<\/strong><\/p>\n<ul>\n<li>1 lb soft fresh goat cheese<\/li>\n<li>2 Tab olive oil<\/li>\n<li>2 Tab fresh lemon juice<\/li>\n<li>2 tsp grated lemon peel<\/li>\n<li>3 Tab finely chopped fresh cilantro<\/li>\n<li>3 Tab finely chopped fresh chives<\/li>\n<li>8 long slender heads of Belgian endive<\/li>\n<li>Very small fresh cilantro sprigs (for garnish)<\/li>\n<li>6 grape tomatoes, cut crosswise into very thin slices, slices halved (for garnish)<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Using on\/off turns, blend goat cheese, olive oil, 1 tablespoon lemon juice, and lemon peel in food processor just until smooth and creamy.<\/li>\n<li>Transfer mixture to medium bowl.<\/li>\n<li>Stir in chopped cilantro and chives.<\/li>\n<li>Season cheese mixture to taste with salt and pepper.<\/li>\n<li>If desired, transfer cheese mixture to pastry bag fitted with small plain tip.<\/li>\n<li>Cover and refrigerate until cold. (Can be made 1 day ahead. Keep refrigerated.)<\/li>\n<li>Cut off and discard root ends of endive.<\/li>\n<li>Separate leaves.<\/li>\n<li>Toss\u00a0with remaining 1 tablespoon lemon juice in large bowl to coat.<\/li>\n<li>Arrange endive leaves in concentric circles on large platter.<\/li>\n<li>Pipe or spoon about 1 1\/2 teaspoons cheese mixture at wide end of each endive leaf.<\/li>\n<li>Place 1 very small sprig cilantro and tomato slice atop each.<\/li>\n<li>Cover and chill.<\/li>\n<li>Can be made 4 hours ahead.<\/li>\n<\/ol>\n<p><strong>Serves:\u00a0\u00a0<\/strong>Makes about 60 pieces<\/p>\n<p><strong>Source:\u00a0\u00a0<\/strong>Bon Appetite<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Really now, don&#8217;t you think you could squirt just about any flavored soft cheese on the endive and garnish it with a sprig of green stuff?
