Romaine\/spinach, baby spring mix.\u00a0 Which mushrooms?\u00a0 white or Enoki, shiitake, crimini (baby bellas).\u00a0 What about tomatoes?\u00a0 Diced Romas? or Tiny\u00a0<\/em><em>Sweet 100s , Rainbow cherry tomatoes, dead ripe home grown Heirlooms.\u00a0 For a really\u00a0fancy touch check out edible flowers!<\/em><\/p>\n<p><b>Ingredients<\/b><strong>:<\/strong><\/p>\n<ul>\n<li>2 lb trendy lettuce<\/li>\n<li>2 lb romaine<\/li>\n<li>200 small to medium asparagus<\/li>\n<li>2 &#8211; 3 lb mushrooms &#8211; Enoki, Crimini\u00a0 (or several mixed varieties)<\/li>\n<li>2+ lb cherry tomatoes<\/li>\n<li>2 c Creamy Parsley Dressing (on the blog)<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Wash and dry the lettuce (paper towels or spinner)<\/li>\n<li>Tear into bite size pieces.<\/li>\n<li>Trim the tough ends off the asparagus.<\/li>\n<li>Cut into 1 inch pieces.<\/li>\n<li>Drop into boiling water (in small batches) then remove quickly. (I find using a strainer to raise and lower saves a lot of water.)<\/li>\n<li>Drop the blanched asparagus in ice water.<\/li>\n<li>Dry.<\/li>\n<li>Rinse and dry mushrooms<\/li>\n<li>Rinse and dry tomatoes (Are you getting a trend here?\u00a0 No one wants a watered down salad.)<\/li>\n<li>Place everything but the dressing in a bow.<\/li>\n<li>Toss gently.<\/li>\n<li>Add half the dressing.<\/li>\n<li>Toss gently.<\/li>\n<li>Does it need more?\u00a0 Add it.<\/li>\n<li>Toss again.<\/li>\n<li>Serve.<\/li>\n<\/ol>\n<p>Or:\u00a0 for really fancy &#8211; compose the salad:\u00a0 Place a serving (scant cup) lettuce on plate, top with asparagus, mushrooms, tomatoes arranged artfully.\u00a0 Drizzle on dressing.\u00a0 Garnish with edible flower.<\/p>\n<p><strong>Serves:\u00a0\u00a0<\/strong> 50\u00a0 but you can cut it down you know.<\/p>\n<p><strong>Source:\u00a0\u00a0<\/strong>We were playing with food.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This can go from plain to fancy &#8211; which lettuce?
