In this version, we charred the corn on the stove top, though a trip to the grill wouldn&#8217;t hurt.\u00a0 Margie charred hers in the oven.\u00a0 It can be made ahead and heated at the party.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>4 Tab bacon fat (or oil if you must)<\/li>\n<li>8 ears fresh corn, shucked,\u00a0kernels removed or 2 lbs frozen corn (about 6 cups of corn kernels)<\/li>\n<li>Kosher salt<\/li>\n<li>2 tablespoons mayonnaise<\/li>\n<li>1 c sour cream<\/li>\n<li>2 oz feta or cotija cheese, finely crumbled<\/li>\n<li>1\/2 c finely sliced\u00a0 greens onions (about 5)<\/li>\n<li>1\/2 c fresh cilantro leaves, finely chopped<\/li>\n<li>1 jalape\u00f1o pepper, seeded and stemmed, finely chopped<\/li>\n<li>1 to 2 medium cloves garlic, pressed or minced on a microplane grater (about 1 to 2 teaspoons)<\/li>\n<li>1 fresh juice from 1 lime<\/li>\n<li>Chili powder or hot chili flakes, to taste<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong>.<\/p>\n<ol>\n<li>Preheat oven 350\u00b0.<\/li>\n<li>Heat the bacon fat in a large non-stick skillet or wok over high heat until shimmering.<\/li>\n<li>Add corn kernels.<\/li>\n<li>Season to taste with salt.<\/li>\n<li>Toss once or twice, and cook without moving until charred on one side, about 2 minutes.<\/li>\n<li>Toss corn, stir, and repeat until charred on second side, about 2 minutes longer.<\/li>\n<li>Continue tossing and charring until well charred all over, about 10 minutes total.\u00a0\u00a0CAUTION this is very messy and the corn will sometimes jump out of the pan.<\/li>\n<li>Transfer 4 cups to a large bowl.<\/li>\n<li>Transfer 2 cups to a food processor and process until creamy\/slightly chunky.<\/li>\n<li>Transfer to the bowl.<\/li>\n<li>Add mayonnaise, sour cream,cheese, scallions, cilantro, jalape\u00f1o, garlic, lime juice, and chili powder.<\/li>\n<li>Toss to combine.<\/li>\n<li>Taste and adjust seasoning with salt and more chili powder to taste.<\/li>\n<li>Place in 1 quart heat-proof dish.<\/li>\n<li>Bake at 350\u00b0 for 30 minute, until heated through.\u00a0 (although it is just as good cold!)<\/li>\n<li>Serve with large corn chips or crackers.<\/li>\n<\/ol>\n<p><strong>Serves:\u00a0<\/strong>10<\/p>\n<p><strong>Source:\u00a0 <\/strong>GK<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Smoky, sweet, spicy, and tangy dip version of\u00a0elotes\u2014grilled Mexican street corn slathered with creamy, cheesy, lime-scented, chili-flecked sauce.
