You can bake the potatoes and cook the bacon the night before.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>5 lb russet potatoes (5-6 Costco large)<\/li>\n<li>1 lb bacon<\/li>\n<li>1 liter (4 ++ cups) chicken broth (depending on how soupy you want it)<\/li>\n<li>1 lg onion &#8211; diced<\/li>\n<li>1\/2 tsp garlic salt<\/li>\n<li>1\/2 tsp poultry seasoning<\/li>\n<li>1\/2 tsp white pepper<\/li>\n<li>1\/4 tsp nutmeg<\/li>\n<li>2 Tab Onion Soup Mix<\/li>\n<li>1 1\/2 lb cheddar cheese\/Mexican blend<\/li>\n<li>sour cream<\/li>\n<li>green onions<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Bake potatoes 375\u00b0 60-90 minutes.<\/li>\n<li>Bake bacon about 30 min depending on thickness<\/li>\n<li>Reserve bacon fat.<\/li>\n<li>Crumble bacon.<\/li>\n<li>Next day, or when cool, roll potatoes to soften.<\/li>\n<li>Cut in half.<\/li>\n<li>Peel just the skin off the potato.\u00a0 The browned potato bits add a lot of flavor.\u00a0 It&#8217;s OK if some skin remains.<\/li>\n<li>In a large stew pot, cook the onions in 1 Tab bacon fat until light brown.<\/li>\n<li>Add broth and spice.<\/li>\n<li>Heat to low boil.<\/li>\n<li>Crumble potatoes into soup.<\/li>\n<li>Season to taste.<\/li>\n<li>Just before serving, stir in 1\/2 bacon and 1\/2 cheese.<\/li>\n<li>Serve with remaining bacon, cheese, sour cream, green onions.<\/li>\n<\/ol>\n<p><strong>Serves:\u00a0<\/strong>6-8<\/p>\n<p><strong>Source:\u00a0\u00a0<\/strong>Margie<\/p>\n<p><strong>Ingredients for 50:<\/strong><\/p>\n<ul>\n<li>30 lb russet potatoes<\/li>\n<li>6 lb bacon<\/li>\n<li>6 liter chicken broth (or more depending on how soupy you want it)<\/li>\n<li>6 lg onion &#8211; diced<\/li>\n<li>1 Tab garlic salt<\/li>\n<li>1 Tab poultry seasoning<\/li>\n<li>1 Tab white pepper<\/li>\n<li>1 1\/2 tsp nutmeg<\/li>\n<li>6 Tab Onion Soup Mix<\/li>\n<li>5 lb cheddar cheese\/Mexican blend<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This started as a way to use up leftover\u00a0baked potatoes, but is so good, I bake potatoes to make it.
