However, it is not that difficult and can be done in separate parts over time. Bacon &#8211; set aside, Beans\/Snap peas &#8211; put in fridge, Creamy dressing &#8211; make 3 days ahead,\u00a0 Just assemble at the last minuet.\u00a0 And it is best served at room temperature.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>6 slices bacon<\/li>\n<li>7 oz sugar snap peas<\/li>\n<li>7 oz haricots verts (thin French green beans)<\/li>\n<li>Small handful fresh chives snipped into 1\/2 inch pieces (OK, little green onions if you have to)<\/li>\n<li>2 Tab red wine vinegar<\/li>\n<li>1 tsp whole-grain mustard<\/li>\n<li>1 Tab olive oil<\/li>\n<li>1 tsp maple syrup<\/li>\n<li>Kosher salt<\/li>\n<li>Leaves from 2 to 4 sprigs fresh tarragon (That would be a teaspoon of dried &#8211; but not as good)<\/li>\n<li>2 Tab\u00a0 mayonnaise (do not use nonfat)<\/li>\n<li>2 Tab sour cream or cr\u00e8me fra\u00eeche (do not use nonfat)<\/li>\n<li>1 Tab fresh lemon juice<\/li>\n<li>1 teaspoon Dijon mustard<\/li>\n<li>Freshly ground black pepper<\/li>\n<li>1 head romaine lettuce or 2 romaine lettuce hearts<\/li>\n<li>2 Tab freshly grated Parmigiano-Reggiano cheese<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Line a plate with paper towels.<\/li>\n<li>Cut the bacon crosswise into \u00be-inch pieces.<\/li>\n<li>Arrange in a single layer in a wide saute pan.<\/li>\n<li>Cook for 5 to 7 minutes over medium heat, or until it is crisped and browned at the edges.\u00a0(or in oven 375\u00b0)<\/li>\n<li>Use a slotted spoon to transfer the bacon to the paper-towel-lined plate.<\/li>\n<li>Reserve 1 tablespoon of the fat from the pan.<\/li>\n<li>Add it to a mixing bowl along with the vinegar, whole-grain mustard, half of the chives, the tablespoon of oil and the maple syrup.<\/li>\n<li>Whisk to form an emulsified dressing.<\/li>\n<li>Bring a pot of water to a full rolling boil over high heat.<\/li>\n<li>Meanwhile, string the sugar snap peas. (The ones I bought had no strings! Check)<\/li>\n<li>Trim the haricots verts. (If too long, cut them in half}<\/li>\n<li>Add a good pinch of salt to the boiling water.<\/li>\n<li>Add the haricots verts and sugar snaps.<\/li>\n<li>Once the water returns to a boil, cook for barely 2 minutes, until tender.<\/li>\n<li>Use a slotted spoon to immediately transfer the haricots verts and sugar snaps to a bowl of ice and water to keep them bright green.\u00a0 (If you have a spaghetti pot with a perforated liner &#8211; use that.\u00a0 Much easier)<\/li>\n<li>Drain and pat dry.<\/li>\n<li>Transfer to the bowl with the bacon fat dressing.<\/li>\n<li>Toss until coated.<\/li>\n<li>Coarsely chop the tarragon.<\/li>\n<li>Whisk together the mayonnaise, sour cream or cr\u00e8me fra\u00eeche, lemon juice, tarragon and Dijon mustard in a medium bowl to form a creamy dressing.<\/li>\n<li>Season lightly with salt and pepper.<\/li>\n<li>Cut the romaine into quarters or separate the leaves as you like, discarding the cores.<\/li>\n<li>Arrange on a platter or individual plates.<\/li>\n<li>Drizzle with the creamy Dijon dressing.<\/li>\n<li>Scatter the Parmigiano-Reggiano and the remaining chives over the dressing.<\/li>\n<li>Pile the dressed beans and the bacon on top.\u00a0 (or you can chop the romaine and toss with the beans\/peas and creamy Dijon dressing)<\/li>\n<li>Serve at room temperature.<\/li>\n<\/ol>\n<p><strong>Serves:<\/strong>\u00a0 4<\/p>\n<p><strong>Source:\u00a0\u00a0<\/strong>Bonnie Benwick, Denver Post<\/p>\n","protected":false},"excerpt":{"rendered":"<p>A long lists of ingredients are a turn-off when looking for ideas.\u00a0 And 27 steps for directions!!
