{"id":7492,"date":"2019-06-16T16:42:43","date_gmt":"2019-06-16T22:42:43","guid":{"rendered":"https:\/\/hill-kleerup.org\/blog\/margie\/?p=7492"},"modified":"2023-08-10T17:08:18","modified_gmt":"2023-08-10T23:08:18","slug":"chinese-pearl-balls","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/chinese-pearl-balls.html","title":{"rendered":"Chinese Pearl Balls"},"content":{"rendered":"<p><em>A little complicated, but a hit for that Chinese New Year&#8217;s Dinner!<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 c glutinous rice (sticky rice)<\/li>\n<li>2 pieces dried shitake mushrooms<\/li>\n<li>1 lb ground pork (For moist meatballs, use ground pork with about higher percent of fat.)<\/li>\n<li>\u00bc c water chestnuts, finely chopped<\/li>\n<li>1 thumb-size ginger, peeled and minced<\/li>\n<li>2 green onions, ends trimmed and chopped<\/li>\n<li>2 cloves garlic, peeled and minced<\/li>\n<li>1 Tab soy sauce<\/li>\n<li>1 Tab Mirin\u00a0 (Chinese cooking wine)<\/li>\n<li>1 tsp sesame oil<\/li>\n<li>1 egg, beaten<\/li>\n<li>\u00bd tsp salt<\/li>\n<li>\u00bc tsp pepper<\/li>\n<\/ul>\n<p><strong>Dipping Sauce<\/strong><\/p>\n<ul>\n<li>Soy sauce to taste<\/li>\n<li>Chili sauce to taste<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>In a bowl, combine glutinous rice and enough water to cover.<\/li>\n<li>Soak for at at least 6 hours\u00a0or overnight for best results.<\/li>\n<li>In a colander, drain well and transfer into a wide plate.<\/li>\n<li>In a small bowl with warm water, soak shitake mushrooms until softened.<\/li>\n<li>Using hands, squeeze liquid.<\/li>\n<li>Mince.<\/li>\n<li>In a bowl, combine ground pork, water chestnuts, mushrooms, ginger, green onions, garlic, soy sauce, wine, sesame oil, egg, salt and pepper.<\/li>\n<li>Gently stir to combine.<\/li>\n<li>Form meat mixture into balls of about 1-inch diameter.\u00a0\u00a0If meat mixture is too soft to shape or roll in rice, freeze for about 10 to 15 minutes to firm up.<\/li>\n<li>Gently roll each ball in rice to fully coat, pressing rice onto meat.<\/li>\n<li>\u00a0Line a steamer with wax paper or Chinese cabbage leaves.<\/li>\n<li>Arrange rice-coated meatballs in a single layer on steamer at about \u00bd inch apart.<\/li>\n<li>Steam for about 20 to 30 minutes or until rice and meat are cooked through.<\/li>\n<li>Serve with dipping sauce.<\/li>\n<\/ol>\n<p><strong>Serves:\u00a0\u00a0<\/strong>Makes 2 dozens<\/p>\n<p><strong>Source: <\/strong>kawalingpinoy.com\/chinese-pearl-balls<\/p>\n","protected":false},"excerpt":{"rendered":"<p>A little complicated, but a hit for that Chinese New Year&#8217;s Dinner!
