This delicious, easy-to-make snack is sold on street corners all over the Middle Kingdom.\u00a0 This dish is often mistakenly called a pancake but is bread, unleavened bread \u2013 pancakes are made from batter.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2 c plain (all-purpose) flour<\/li>\n<li>1 c warm water<\/li>\n<li>Vegetable oil<\/li>\n<li>1 c spring onions, finely chopped<\/li>\n<li>Salt<\/li>\n<li>White pepper<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Sift flour into a mixing bowl.<\/li>\n<li>Add water gradually mixing until blended together.<\/li>\n<li>On a floured surface, knead into a smooth, elastic dough.<\/li>\n<li>Roll into a ball.<\/li>\n<li>Cover with a damp cloth,<\/li>\n<li>Let sit for 30 minutes.<\/li>\n<li>Separate dough into 2 pieces.<\/li>\n<li>Roll into balls.<\/li>\n<li>On a floured surface, roll out dough thinly (2 mm).<\/li>\n<li>Daub some oil over surface of each piece of rolled dough.<\/li>\n<li>Spread spring onions evenly over dough.<\/li>\n<li>Sprinkle salt, and add a pinch of pepper.<\/li>\n<li>Roll dough tightly like a burrito.<\/li>\n<li>From end to end, roll each loop into a spiral like a snail shell.<\/li>\n<li>Tuck tail end on top of spiral.<\/li>\n<li>Roll into a disc about the size of a dinner plate.<\/li>\n<li>Add 1 to 2 tablespoons of oil to a flat-bottomed fry pan.<\/li>\n<li>Bring to a medium heat.<\/li>\n<li>Fry on both sides until golden brown.<\/li>\n<li>Slice like a pizza and serve immediately with or without a dipping sauce,<\/li>\n<\/ol>\n<p><strong>Serves:<\/strong>\u00a0 6 as snack or as part of a meal<\/p>\n<p><strong>Source:\u00a0 Cookchina<\/strong>.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>\u8525\u6cb9\u9905 c\u014dng y\u00f3ub\u01d0ng (scallion\/spring onion pancakes).
