{"id":7672,"date":"2019-07-23T09:05:37","date_gmt":"2019-07-23T15:05:37","guid":{"rendered":"https:\/\/hill-kleerup.org\/blog\/margie\/?p=7672"},"modified":"2024-04-05T03:01:35","modified_gmt":"2024-04-05T09:01:35","slug":"rice-artichoke-and-shrimp-salad","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/rice-artichoke-and-shrimp-salad.html","title":{"rendered":"Rice, Artichoke and Shrimp Salad"},"content":{"rendered":"<p><em>This can be served cold as a salad or heated as a casserole\u00a0 &#8211; a twofer!<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 lb small or medium cooked shrimp (or crab)<\/li>\n<li>3 to 4 chopped green onions,\u00a0white and green parts<\/li>\n<li>6 sliced pimiento-stuffed green olives (optional)<\/li>\n<li>1 tsp curry powder<\/li>\n<li>1 tsp lemon juice<\/li>\n<li>1\/2 c mayonnaise (if kept over night, you might need a little more)<\/li>\n<li>1 (6 oz) jar quartered marinated artichoke hearts, chopped (save the marinade)<\/li>\n<li>1 1\/2 c cooked rice (could be instant, Basmati, brown, etc.)<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Drain the artichoke hearts and reserve the marinade.<\/li>\n<li>In a small bowl, whisk the marinade and the mayonnaise to combine.<\/li>\n<li>Add the green\u00a0 onions, olives, curry powder, lemon juice, salt and pepper to taste, and mix together.<\/li>\n<li>Add the artichoke mixture to the rice.<\/li>\n<li>Gently stir in the cooked shrimp.<\/li>\n<li>If serving as a salad, chill until ready to serve. If serving as a casserole, preheat oven to 350 \u00b0.
