This is from January 2015, A Taste of San Francisco.<\/p>\n<p><em>Compliments of Jerry Stefani. Jerry recommends substituting a slice of store bought Sourdough Bread in place of the traditional pasta. Place a slice in individual bowls and cover with the finished Cioppino.<\/em><br \/>\n<em>Sauce (can be made in advance):<\/em><\/p>\n<p><strong>Chippino Sauce Ingredients:<\/strong><\/p>\n<ul>\n<li>1\/2 cup olive oil<\/li>\n<li>2 medium onions, halved and thinly sliced<\/li>\n<li>6 cloves garlic, chopped<\/li>\n<li>3 bay leaves<\/li>\n<li>1\/2 cup chopped parsley<\/li>\n<li>1\/4 cup chopped sweet basil<\/li>\n<li>Crushed red pepper, to taste<\/li>\n<li>Dash cinnamon<\/li>\n<li>Kosher salt, to taste<\/li>\n<li>Finishing ingredients<\/li>\n<\/ul>\n<p><strong>Chippino Sauce Directions:<\/strong><\/p>\n<ol>\n<li>Heat the olive oil in a large saucepan over medium heat.<\/li>\n<li>Add the onions and saut\u00e9 until translucent.<\/li>\n<li>Add the garlic, bay leaves, parsley and basil .<\/li>\n<li>Cook, stirring, just to warm the garlic\u2014do not let it brown.<\/li>\n<li>Stir in the crushed tomatoes, tomato puree, water, clam base, brown sugar, celery salt, Worcestershire sauce,black and red peppers, cinnamon and salt to taste.<\/li>\n<li>Bring to boil, reduce heat to low-medium and simmer uncovered for about 1 hour and 15 minutes, stirring occasionally, until thickened.<\/li>\n<\/ol>\n<p><strong>Finishing the Cioppino<\/strong>\u2014At the hostess\u2019 home<\/p>\n<ul>\n<li>1 tablespoon olive oil<\/li>\n<li>1 tablespoon unsalted butter<\/li>\n<li>1 clove garlic, chopped<\/li>\n<li>1\/4 cup white wine<\/li>\n<li>1 pound Little Neck clams<\/li>\n<li>1\/2 pound mussels, scrubbed<\/li>\n<li>2 quarts Cioppino Sauce, recipe follows<\/li>\n<li>2 dashes Worcestershire Sauce<\/li>\n<li>Pinch saffron<\/li>\n<li>2 1\/2 pound Dungeness crab, cooked, cleaned and cracked, (or 1 pound cooked crab meat (preferably Dungeness)<\/li>\n<li>1 pound medium shrimp, shell on<\/li>\n<li>1\/2 pound firm-fleshed white fish fillets cut in 2-inch cubes<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Put the olive oil, butter, and garlic in a wide, deep pot over medium heat, and cook, stirring, until the garlic is fragrant, but not brown.<\/li>\n<li>Add the wine.<\/li>\n<li>Turn the heat up to medium-high and steam until the clams start to open, about 5 minutes.<\/li>\n<li>Add the mussels, cover and steam until the just start to open, about 2 minutes.<\/li>\n<li>N ow stir in the cioppino sauce, the Worcestershire sauce and saffron and bring to a simmer.<\/li>\n<li>Add the cracked crabs, if using, and the shrimp, and simmer for about 5 minutes.<\/li>\n<li>Then gently stir in the fish and simmer until they are all just cooked through, about 5 minutes.
