{"id":7828,"date":"2019-09-19T08:05:12","date_gmt":"2019-09-19T14:05:12","guid":{"rendered":"https:\/\/hill-kleerup.org\/blog\/margie\/?p=7828"},"modified":"2019-09-19T08:05:12","modified_gmt":"2019-09-19T14:05:12","slug":"veal-cordon-bleu","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/veal-cordon-bleu.html","title":{"rendered":"Veal Cordon Bleu"},"content":{"rendered":"<p><em>Yes, it\u00a0is a lot of work, many steps, but this is a <strong>classic<\/strong> recipe!<\/em><\/p>\n<p><strong>Ingredients:\u00a0<\/strong><\/p>\n<ul>\n<li>8 (1\/8-inch-thick) veal cutlets (also called scaloppine; all the same size, about 2 1\/2 oz each)<\/li>\n<li>1 (1\/2-lb) piece Gruy\u00e8re<\/li>\n<li>4 (1\/8-inch-thick) slices baked ham such as Virginia<\/li>\n<li>1 c plain dry bread crumbs<\/li>\n<li>2 tsp salt<\/li>\n<li>3\/4 tsp black pepper<\/li>\n<li>3\/4 c all-purpose flour<\/li>\n<li>2 large eggs<\/li>\n<li>2 Tab unsalted butter<\/li>\n<li>2 Tab olive oil<\/li>\n<li>Garnish: lemon wedges; fresh parsley sprigs<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>If cutlets are thicker than 1\/8 inch, pound them between sheets of plastic wrap with flat side of meat pounder.<\/li>\n<li>Using cheese plane, shave enough cheese to make a double layer for each of 4 cutlets.<\/li>\n<li>Pat dry 2 cutlets of the same shape.<\/li>\n<li>Arrange 1 cutlet on a work surface.<\/li>\n<li>Put 1 slice of ham on cutlet, trimming ham to leave a 1\/4-inch border of veal around the ham.<\/li>\n<li>Then arrange a double layer of cheese on ham.<\/li>\n<li>Top with second cutlet.<\/li>\n<li>Lightly pound 1\/4-inch border around cutlets&#8217; outer edges to seal veal sandwich.<\/li>\n<li>Make 3 more sandwiches in same manner.<\/li>\n<li>Line a baking sheet with wax paper.<\/li>\n<li>Stir together bread crumbs, 1 teaspoon salt, and 1\/4 teaspoon pepper in a large shallow baking dish.<\/li>\n<li>Stir together flour, 3\/4 teaspoon salt, and 1\/4 teaspoon pepper in another large baking dish.<\/li>\n<li>Whisk together eggs, remaining 1\/4 teaspoon salt, and remaining 1\/4 teaspoon pepper in a third large baking dish.<\/li>\n<li>Dredge 1 veal sandwich in flour, knocking off excess, then dip in egg to coat, letting excess drip off, and dredge in bread crumbs, patting to help them adhere.<\/li>\n<li>Transfer coated sandwich to a rack set on a baking sheet.<\/li>\n<li>Dredge and coat remaining sandwiches in same manner.<\/li>\n<li>Chill, uncovered, 1 hour.\u00a0\u00a0Chilling coated cutlets helps the coating to adhere when cooking.<\/li>\n<li>Then let stand at room temperature 30 minutes before cooking.<\/li>\n<li>Heat 1 tablespoon butter and 1 tablespoon oil in a 12-inch heavy skillet over moderately high heat until foam subsides<\/li>\n<li>Add 2 veal sandwiches, then reduce heat to moderate and cook, turning over once, until golden, about 4 minutes total.<\/li>\n<li>Transfer to plates and wipe out skillet with paper towels.<\/li>\n<li>Cook remaining sandwiches in remaining butter and oil in same manner.<\/li>\n<\/ol>\n<p><strong>Serves:<\/strong>\u00a04<\/p>\n<p><strong>Source:\u00a0\u00a0<\/strong> VPWL Guess Who is Coming to Dinner<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yes, it\u00a0is a lot of work, many steps, but this is a classic recipe!
