{"id":789,"date":"2014-09-29T15:10:39","date_gmt":"2014-09-29T21:10:39","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=789"},"modified":"2015-03-30T15:45:21","modified_gmt":"2015-03-30T21:45:21","slug":"pike-place-market-salad","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/pike-place-market-salad.html","title":{"rendered":"Pike Place Market Salad"},"content":{"rendered":"<p align=\"LEFT\"><em>This is a really nice salad for the spring.<\/em><\/p>\n<p align=\"LEFT\"><b>Ingredients:<\/b><\/p>\n<ul>\n<li>2 Tab sugar<\/li>\n<li>\u00bd c coarsely chopped walnuts<\/li>\n<li>cooking spray<\/li>\n<li>1 c apple cider<\/li>\n<li>\u00bd tsp cornstarch<\/li>\n<li>2 Tab finely chopped shallots<\/li>\n<li>2 Tab champagne \/white wine vinegar<\/li>\n<li>\u00bc tsp salt<\/li>\n<li>\u00bc tsp freshly ground black pepper<\/li>\n<li>20 c mixed salad greens<\/li>\n<li>4 c berries (raspberries, blueberries) and\/or pitted sweet cherries<\/li>\n<li>\u00bd c blue cheese crumbled (2 oz)<\/li>\n<\/ul>\n<p align=\"LEFT\"><b>Directions:<br \/>\n<\/b>To prepare nuts:<\/p>\n<ol>\n<li>Place sugar in a small skillet over medium heat; cook 90 seconds or until sugar dissolves, stirring as needed.<\/li>\n<li>Reduce heat and stir in walnuts.<\/li>\n<li>Cook over low heat 30 seconds or until golden.<\/li>\n<li>Spread mixture on foil coated with cooking spray.<\/li>\n<li>Cool completely, break into small pieces.<\/li>\n<\/ol>\n<p>To prepare dressing:<\/p>\n<ol>\n<li>Place cider in a small saucepan over medium high heat, bring to a boil.<\/li>\n<li>Cook until reduced to 2 tablespoons (about 5 minutes).<\/li>\n<li>Combine water and cornstarch in a small bowl; add to pan.<\/li>\n<li>Bring cider mixture to a boil, stirring constantly; cook 30 seconds.<\/li>\n<li>Remove from heat. Stir in shallots, vinegar, salt and pepper; let cool.<\/li>\n<\/ol>\n<p align=\"LEFT\">To prepare salad:<\/p>\n<ol>\n<li>Place salad mix in a large bowl.<\/li>\n<li>Drizzle with dressing.<\/li>\n<li>Toss gently to coat.<\/li>\n<li>Divide evenly among 10 plates.<\/li>\n<li>Top with berries, cheese and walnuts.<\/li>\n<\/ol>\n<p align=\"LEFT\"><span style=\"color: #000000\"><b>Serves: <\/b><\/span><span style=\"color: #000000\">10<\/span><\/p>\n<p align=\"LEFT\"><b>Source: <\/b> Cathy Conrad, Cooking Light, June 2005<\/p>\n<p align=\"LEFT\"><b>Comment: <\/b>Dried berries and\/or cherries would be a good substitute if fresh are not available.<\/p>\n<p align=\"CENTER\">\n","protected":false},"excerpt":{"rendered":"<p>This is a really nice salad for the spring.
