Dress it up with salsa and sour cream or a warm cheese sauce.\u00a0 Change out the veggies &#8211; you know all the variations like broccoli, tomatoes, mushrooms, diced chilies, whatever.\u00a0 For a less firm casserole add a cup of milk or sour cream to the mixture.\u00a0 This reheats nicely.<\/em><\/p>\n<p><strong>Ingredients:\u00a0<\/strong><\/p>\n<ul>\n<li><span style=\"font-weight: 400;\">12 eggs\u00a0<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 tsp garlic\u00a0<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1\/2 tsp black pepper\u00a0<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1\/4 tsp salt\u00a0<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 1\/2 C fresh baby spinach, chopped (or 10 oz frozen)<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1\/2 of an orange or red bell pepper, chopped\u00a0<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1\/4 C red onion, chopped\u00a0<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 C shredded jack\/mozzarella cheese, divided\u00a0<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1\/2 C shredded cheddar cheese<\/span><\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li><span style=\"font-weight: 400;\">Preheat oven to 350\u00b0. <\/span><\/li>\n<li><span style=\"font-weight: 400;\">Lightly spray a 9 x 13 inch baking dish with non-stick cooking spray. <\/span><\/li>\n<li><span style=\"font-weight: 400;\">Whisk together eggs, garlic, salt, and pepper in a large bowl. <\/span><\/li>\n<li><span style=\"font-weight: 400;\">Mix in spinach, bell pepper, onion, and \u00be C jack cheese. <\/span><\/li>\n<li><span style=\"font-weight: 400;\">Pour mixture into prepared baking dish. <\/span><\/li>\n<li><span style=\"font-weight: 400;\">Bake for 20 minutes. <\/span><\/li>\n<li><span style=\"font-weight: 400;\">Carefully remove from oven and sprinkle with remaining jack\/mozzarella and cheddar cheeses. <\/span><\/li>\n<li><span style=\"font-weight: 400;\">Bake for an additional 20 minutes.\u00a0<\/span><\/li>\n<\/ol>\n<p><strong>Serves:\u00a0\u00a0<\/strong>8-12<\/p>\n<p><strong>Source:\u00a0\u00a0<\/strong>Kitchen Addiction via Cathy Painter<\/p>\n","protected":false},"excerpt":{"rendered":"<p>A good way to get protein and veggies into your breakfasts.
