{"id":7939,"date":"2019-10-14T03:51:05","date_gmt":"2019-10-14T09:51:05","guid":{"rendered":"https:\/\/hill-kleerup.org\/blog\/margie\/?p=7939"},"modified":"2020-02-19T15:39:29","modified_gmt":"2020-02-19T22:39:29","slug":"baked-chicken-chiles-rellenos","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/baked-chicken-chiles-rellenos.html","title":{"rendered":"Baked Chicken Chiles Rellenos"},"content":{"rendered":"<p><em>You will love not frying these in all that oil!<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>10 fresh pasilla chilis<\/li>\n<li>10 skinless, boneless chicken breast halves<\/li>\n<li>1\/2 c all-purpose flour<\/li>\n<li>4 Tab cornmeal<\/li>\n<li>\u00bc tsp ground red pepper<\/li>\n<li>2 egg<\/li>\n<li>2 Tab water<\/li>\n<li>6 oz Monterey Jack cheese, cut into six 2 x 1\/2-inch sticks<\/li>\n<li>\u00bd c snipped fresh cilantro<\/li>\n<li>\u00bc tsp black pepper<\/li>\n<li>\u00bc c butter<\/li>\n<li>2 c roasted salsa verde or tomatillo sauce<\/li>\n<li>Snipped fresh cilantro (optional)<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>First wash the pasillas and put on cookie sheet.<\/li>\n<li>Roast at 350\u00b0 ~5-8 minutes until starting to brown and softened.<\/li>\n<li>Let cool.<\/li>\n<li>Cut from stem to tip.<\/li>\n<li>Remove seeds and flatten (you might want to use gloves for this or you may be sorry).<\/li>\n<li>Place a chicken breast half between 2 pieces of plastic wrap.<\/li>\n<li>Using the flat side of a meat mallet, pound meat lightly into a rectangle about 1\/8 inch thick<\/li>\n<li>Remove plastic wrap.<\/li>\n<li>In a shallow dish combine the flour, cornmeal, and ground red pepper.<\/li>\n<li>Place egg in another shallow dish.<\/li>\n<li>Add water and beat lightly to combine.<\/li>\n<li>For each roll, place a chile pepper on a chicken piece near an edge.<\/li>\n<li>Place a cheese stick on the chile pepper near an edge.<\/li>\n<li>Sprinkle with some of the cilantro or parsley and black pepper.<\/li>\n<li>Fold in sides; roll up, burrito style starting from edge with cheese.<\/li>\n<li>Secure with wooden toothpicks.<\/li>\n<li>Dip rolls in egg mixture.<\/li>\n<li>Coat with cornmeal mixture.<\/li>\n<li>Place rolls, seam sides down, in a shallow baking pan.<\/li>\n<li>Drizzle with butter.<\/li>\n<li>Bake, uncovered, in a 375\u00b0 oven for 25 to 30 minutes or until chicken is no longer pink (170 degrees F).<\/li>\n<li>Remove toothpicks.<\/li>\n<li>Meanwhile, heat salsa; serve over chicken.<\/li>\n<li>If desired, garnish with additional cilantro.<\/li>\n<\/ol>\n<p><strong>Serves:\u00a0<\/strong> 8 -10<\/p>\n<p><strong>Source:\u00a0\u00a0<\/strong>Villa Park Women&#8217;s League:\u00a0\u00a0Exploring the Fresh Tastes of Mexico<\/p>\n","protected":false},"excerpt":{"rendered":"<p>You will love not frying these in all that oil!
