{"id":7993,"date":"2019-10-18T06:40:37","date_gmt":"2019-10-18T12:40:37","guid":{"rendered":"https:\/\/hill-kleerup.org\/blog\/margie\/?p=7993"},"modified":"2019-10-18T06:40:37","modified_gmt":"2019-10-18T12:40:37","slug":"classic-cheese-souffles-in-individual-ramekins","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/classic-cheese-souffles-in-individual-ramekins.html","title":{"rendered":"Classic Cheese Souffl\u00e9s in Individual Ramekins"},"content":{"rendered":"<p><em>Everyone should try this once.\u00a0 It is the classic French dish and, surprise, surprise, you will discover it isn&#8217;t that bad to make &#8211; not everyday, but for a party. . . .\u00a0<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>3 Tab finely grated Parmesan cheese<\/li>\n<li>2 c whole milk<\/li>\n<li>5\u00a0tab unsalted butter<\/li>\n<li>6 Tab flour<\/li>\n<li>1 tsp paprika<\/li>\n<li>1 tsp salt<\/li>\n<li>pinch of ground nutmeg<\/li>\n<li>10 large egg yolks<\/li>\n<li>\u00a01 1\/2 c coarsely grated Gruy\u00e8re or sharp cheddar cheese<\/li>\n<li>10 large egg whites<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Preheat oven to 400\u00b0.<\/li>\n<li>Butter 10 individual ramekins.<\/li>\n<li>Add Parmesan cheese to each dish, rotating at a tilt, coating bottom and sides.<\/li>\n<li>Heat milk in heavy small saucepan over medium-low heat until simmering.<\/li>\n<li>Melt butter in a large saucepan over medium heat.<\/li>\n<li>Add flour and whisk until mixture begins to foam and flour loses its raw taste (about 3 minutes \u2014 avoid browning).<\/li>\n<li>Remove saucepan from heat for 1 minute.<\/li>\n<li>Pour in warm milk, whisking until smooth.<\/li>\n<li>Return to heat and cook, whisking constantly until thick (2 to 3 minutes).<\/li>\n<li>Remove from heat, and whisk in paprika, salt, and nutmeg.<\/li>\n<li>Add egg yolks 1 at a time, whisking to blend after each addition.<\/li>\n<li>Sprinkle in cheese and whisk to incorporate.<\/li>\n<li>With a rubber spatula or wooden spoon, scrape souffl\u00e9 base into large bowl.<\/li>\n<li>Cool to lukewarm.<\/li>\n<li>Using electric or stand mixer, beat egg whites in a clean, large bowl until stiff but not dry (whites that are too dry cook and taste grainy).<\/li>\n<li>Fold 1\u20443 of whites into the souffl\u00e9 base to lighten.<\/li>\n<li>Fold in remaining whites in 2 additions.<\/li>\n<li>Transfer batter to prepared dishes, divided equally.<\/li>\n<li>Set dishes onto the sheet pan.<\/li>\n<li>Place in oven on the lowest rack level.<\/li>\n<li>Immediately reduce oven temperature to 375\u00b0.<\/li>\n<li>Bake until souffl\u00e9s are puffed, tops golden brown, and center moves slightly when dish is shaken gently (about 25 minutes).
