{"id":800,"date":"2014-10-11T06:06:02","date_gmt":"2014-10-11T12:06:02","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=800"},"modified":"2016-02-18T04:52:28","modified_gmt":"2016-02-18T11:52:28","slug":"cold-shrimp-roquefort","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/cold-shrimp-roquefort.html","title":{"rendered":"Cold Shrimp Roquefort"},"content":{"rendered":"<p style=\"text-align: left\" align=\"CENTER\"><em>These are pretty impressive. \u00a0You could serve them on lettuce for a first course.<\/em><\/p>\n<p style=\"text-align: left\" align=\"CENTER\"><b>Ingredients:<\/b><\/p>\n<ul>\n<li>20 large shrimp<\/li>\n<li>5 oz Roquefort cheese<\/li>\n<li>4 oz cream, cheese<\/li>\n<li>1 tsp scallions, chopped very fine (or green onions)<\/li>\n<li>1 Tab Cognac or brandy<\/li>\n<li>parsley chopped<\/li>\n<\/ul>\n<p align=\"LEFT\"><b>Directions:<\/b><\/p>\n<ol>\n<li>Steam shrimp until just pink.<\/li>\n<li>Shell and devein.<\/li>\n<li>Starting at the tail, cut a deep slit down the back but not all the way through to make a pocket to hold the Roquefort mixture.<\/li>\n<li>Mix the Roquefort cheese, cream cheese, scallions and Cognac or brandy (a small food processor does this easily.)<\/li>\n<li>Stuff the slit in each shrimp, using a large frosting tip.<\/li>\n<li>Sprinkle the chopped parsley on the stuffed portion of the shrimp<\/li>\n<li>Chill.<\/li>\n<\/ol>\n<p>Can be prepared ahead.
