{"id":8021,"date":"2019-10-29T15:16:30","date_gmt":"2019-10-29T21:16:30","guid":{"rendered":"https:\/\/hill-kleerup.org\/blog\/margie\/?p=8021"},"modified":"2022-08-21T15:40:56","modified_gmt":"2022-08-21T21:40:56","slug":"panzanella-salad","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/panzanella-salad.html","title":{"rendered":"Panzanella Salad II"},"content":{"rendered":"<p><em>Only make this in the middle of summer when you have dead ripe, home grown tomatoes.\u00a0 It is OK, but not to die for, the rest of the year.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>3 Tab good olive oil<\/li>\n<li>1 small French bread or boule, cut into 1-inch cubes (6 cups) (day old rustic bread works best)<\/li>\n<li>1 tsp kosher salt<\/li>\n<li>2 large, ripe tomatoes, cut into 1-inch cubes<\/li>\n<li>1 hothouse cucumber, unpeeled, seeded, and sliced 1\/2-inch thick<\/li>\n<li>1 red bell pepper, seeded and cut into 1-inch cubes<\/li>\n<li>1 yellow bell pepper, seeded and cut into 1-inch cubes<\/li>\n<li>1\/2 red onion, cut in 1\/2 and thinly sliced<\/li>\n<li>20 large basil leaves, coarsely chopped<\/li>\n<li>3 Tab capers, drained<\/li>\n<\/ul>\n<p><strong>Ingredients for the vinaigrette:<\/strong><\/p>\n<ul>\n<li>1 tsp finely minced garlic<\/li>\n<li>1\/2 tsp Dijon mustard<\/li>\n<li>3 Tab Champagne vinegar<\/li>\n<li>1\/2 c good olive oil<\/li>\n<li>1\/2 tsp kosher salt<\/li>\n<li>1\/4 tsp freshly ground black pepper<\/li>\n<li>butter lettuce<\/li>\n<\/ul>\n<p><strong>Directions for the vinaigrette:<\/strong>,<\/p>\n<p>Whisk all the ingredients together.<\/p>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Heat the oil in a large saute pan. Add the bread and salt; cook over low to medium heat, tossing frequently, for 10 minutes, or until nicely browned. Add more oil as needed.<\/li>\n<li>In a large bowl, mix the tomatoes, cucumber, red pepper, yellow pepper, red onion, basil, and capers.<\/li>\n<li>Add the bread cubes and toss with the vinaigrette.
