(Even if you hate sweet potatoes!)<\/em><\/p>\n<p align=\"LEFT\"><b>Soup Ingredients:<\/b><\/p>\n<ul>\n<li>5 Tab butter<\/li>\n<li>1 medium onion, coarsely chopped<\/li>\n<li>9 c chicken stock<\/li>\n<li>1 tsp curry powder<\/li>\n<li>5-6 medium sized sweet potatoes, peeled and cubed<\/li>\n<li>\u00bc c maple syrup<\/li>\n<li>2-5 small sprigs fresh thyme or 1 tsp dried thyme<\/li>\n<li>pinch of cayenne pepper<\/li>\n<li>1 c cream<\/li>\n<li>1\/8 tsp freshly grated nutmeg<\/li>\n<li>salt and white pepper to taste<\/li>\n<\/ul>\n<p align=\"LEFT\"><b>Soup Directions: <\/b><\/p>\n<ol>\n<li>In a 6 quart heavy bottomed saucepan, melt butter over medium heat.<\/li>\n<li>Add the onion and curry powder.<\/li>\n<li>Cook for about 6 minutes stirring occasionally.<\/li>\n<li>Meanwhile, in a separate sauce pan, heat the stock to a simmer.<\/li>\n<li>Add the sweet potato to the onion mixture.<\/li>\n<li>Then add the heated stock, maple syrup , thyme, and cayenne.<\/li>\n<li>Cook until the sweet potatoes are soft, about 25 minutes.<\/li>\n<li>Remove the thyme sprigs.<\/li>\n<li>Puree the soup in small batches and strain.<\/li>\n<li>Return the soup to heat and add the cream, nutmeg, salt &amp; white pepper.<\/li>\n<li>Transfer to individual bowls and serve with a dollop of Rum Cream.<\/li>\n<\/ol>\n<p align=\"LEFT\"><b>Rum Cream Ingredients:<\/b><\/p>\n<ul>\n<li>1 c heavy cream<\/li>\n<li>\u00bd tsp fresh lemon juice<\/li>\n<li>\u00bc tsp grated lemon zest<\/li>\n<li>5 Tab good quality dark rum<\/li>\n<li>pinch of sugar<\/li>\n<\/ul>\n<p align=\"LEFT\">\n<p><b>Rum Cream Directions:<\/b><\/p>\n<ol>\n<li>In the bowl of an electric mixer, whip the cream until soft peaks form.<\/li>\n<li>Add the lemon juice and zest, rum and sugar.<\/li>\n<li>Continue whipping until the cream is almost stiff.<\/li>\n<li>Refrigerate until ready to serve.<\/li>\n<\/ol>\n<p align=\"LEFT\"><b>Serves: <\/b>10<\/p>\n<p align=\"LEFT\"><b>Source: <\/b> The Inn at Little Washington Cookbook: A Consuming Passion, By Patrick O&#8217;Connell, Washington, Virgina<\/p>\n<p align=\"CENTER\">\n","protected":false},"excerpt":{"rendered":"<p>Worth the effort!
