{"id":8151,"date":"2020-02-06T10:04:15","date_gmt":"2020-02-06T17:04:15","guid":{"rendered":"https:\/\/hill-kleerup.org\/blog\/margie\/?p=8151"},"modified":"2020-02-06T10:04:15","modified_gmt":"2020-02-06T17:04:15","slug":"roasted-butternut-squash","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/roasted-butternut-squash.html","title":{"rendered":"Roasted Butternut Squash"},"content":{"rendered":"<p><em>You can make some great &#8220;variations on a theme&#8221; with a sprinkling of seasonings&#8221;.\u00a0 Try seasoned salt, Cajun seasoning, Italian seasoning, Chipotle (or chili) powder + ground cumin, or ground cinnamon + brown sugar (or maple syrup).<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>4 medium butternut squash (4 to 5 pounds total)<\/li>\n<li>1 c unsalted butter, melted and cooled<\/li>\n<li>1\/2 cup light brown sugar, packed<\/li>\n<li>1 tablespoon kosher salt<\/li>\n<li>1 -2 teaspoon fresh ground black pepper<\/li>\n<\/ul>\n<p><b>Directions:\u00a0<\/b><\/p>\n<ol>\n<li>Preheat the oven to 400\u00b0.<\/li>\n<li>Cut off the ends of each butternut squash and discard.<\/li>\n<li>Peel the squash and cut in half lengthwise.<\/li>\n<li>Using a spoon, remove the seeds and cut the squash into 1 1\/4&#8243; to 1 1\/2&#8243; cubes (large and uniform is best).<\/li>\n<li>Place them on a baking sheet.<\/li>\n<li>Add the melted butter, brown sugar, salt and pepper.<\/li>\n<li>With clean hands (seriously?
